Black gram (urad): nutrition per 100 g
Per 100 g, urad dal gives 324 kcal, 23.1 g protein, 11.9 g dietary fibre and 173 mg magnesium, according to IFCT 2017. Its protein ranks 11th of 257 foods, and it carries 566 mg of plant omega-3 per 100 g, 2nd among pulses. It is also the dal that makes idli and dosa batter rise.
About black gram (urad)
Urad, or black gram, is a small pulse with a black skin and a creamy white inside. Split and husked, it is the white urad dal of South Indian kitchens; whole and black, it is the sabut urad of Punjab. Andhra Pradesh, Madhya Pradesh, Uttar Pradesh, Maharashtra and Tamil Nadu grow most of it. IFCT 2017 records it as ulutham paruppu in Tamil, minapa pappu in Telugu, uddhina bele in Kannada, uzhunnu parippu in Malayalam, biulir dal in Bengali, maa ki daal in Punjabi and maassa in Sanskrit.
Urad is the backbone of South Indian breakfasts. Ground with rice and left to ferment, its sticky proteins hold the gas that makes idli light and dosa crisp, and alone it makes medu vada. It sputters in almost every South Indian tadka. In the north, whole urad slow-cooked with rajma, butter and cream is dal makhani, while Bengal cooks biulir dal thin with fennel and ginger, and dahi bhalla is made from soaked urad batter.
IFCT 2017 also tests whole urad. Per 100 g it has 291 kcal, 22.0 g protein, 20.4 g fibre, 5.97 mg iron and 86 mg calcium, with the black skin holding much of the extra fibre. Split urad with the skin left on, sold as chilka urad, sits between the two and gives a darker, earthier dal in Punjabi and Rajasthani homes.

How black gram (urad) is eaten
- Idli and dosa batter: urad dal soaked and ground until fluffy, mixed with rice batter and fermented overnight.
- Medu vada: thick urad batter with pepper and curry leaves, shaped into rings and fried crisp.
- Dal makhani: whole urad and rajma soaked overnight and simmered for hours with tomato, butter and cream.

Before you plan around it
Urad is famously heavy. Its sugars and gums ferment in the gut and cause gas, which is why traditional recipes pair it with hing, ginger, fennel or pepper, and why fermentation in idli batter makes it easier to digest. Whole urad for dal makhani needs a long soak and long cooking. Restaurant dal makhani often carries a great deal of butter and cream, so the dal's protein comes with plenty of saturated fat. Papad, made from urad flour, is also high in salt. People with kidney disease on a potassium limit should ask their dietitian about portions.

IFCT 2017 lists 23.1 g protein per 100 g of urad dal, 4th of 14 pulses and 11th of 257 foods. For a man, that is about 43 per cent of the day's protein requirement. Eaten with rice, as in idli and dosa, the protein becomes more complete.
Why is urad dal used in idli batter?
Urad contains sticky gums and proteins that trap the gas made during fermentation. That is what makes idli soft and spongy and dosa batter rise. Without enough urad, the batter stays flat and dense.
Is whole urad healthier than urad dal?
Whole urad keeps its black skin, which adds fibre and some minerals. Per 100 g in IFCT 2017, whole urad has 20.4 g fibre and 5.97 mg iron against 11.9 g and 4.67 mg in the husked dal. Protein is similar.
Does urad dal cause gas?
It can. Its complex sugars ferment in the gut. Soaking, pressure-cooking, fermenting into batter, and cooking with hing, ginger or fennel all help. Starting with small portions gives the gut time to adjust.
