Calories in Dahi Vada

One dahi vada has about 90 kcal. ICMR-NIN's Dietary Guidelines for Indians give approximately 180 kcal for 2 vadas, and the figure for one is half of that. The guideline does not state the size of the vada or how much curd covers it, and it gives no protein, carbohydrate or fat figure. Sweet chutney adds more.

What this figure covers

ICMR-NIN's table of approximate values puts 2 dahi vadas at about 180 kcal, so each is counted at 90 kcal including its share of curd. Neither the size of the vada nor the amount of curd is stated. A chaat-stall dahi bhalla is often one large vada under a ladle of sweetened curd and two chutneys, while home-made dahi vadas tend to be smaller and plainer. The figure is a guide to the plain kind: a fried urad vada, soaked and covered in lightly seasoned curd. Half a vada is about 45 kcal.

Three things supply the energy: the urad dal in the vada, the oil it was fried in, and the curd poured over it. The dal gives starch and protein. The oil is the densest part, as fat always is. The curd adds a little protein and, depending on the milk it was set from, some fat. What makes dahi vada unusual among fried snacks is the step in between: the fried vadas are soaked in water and gently squeezed before the curd goes on, so they reach the plate soft and moist instead of crisp. The toppings then decide the rest.

    Sugar in the curd and chutney

    Chaat-style dahi vada uses sweetened curd and tamarind chutney. Each teaspoon of sugar that ends up on a vada adds about 16 kcal, so one teaspoon makes it about 106 kcal and two about 122 kcal. Plain salted curd with roasted cumin adds none.

    How large the vada is

    The guideline does not give a size. Small home vadas and the big single bhalla of a chaat counter are both called one vada, and the larger one holds more dal and more oil. Three vadas at the guideline rate are about 270 kcal.

    The curd

    Thick curd from full-cream milk, or curd enriched with cream, is richer than curd set from toned milk. A vada drowned in a bowlful of curd is also a bigger serving than one lightly coated.

    Frying and soaking

    The vada is deep-fried first, and a batter that is too thin soaks up more oil at that stage. Some cooks steam the vadas or cook them in an appe pan instead, which removes most of the frying oil while the curd and spices keep the dish familiar.

Because the curd hides it, the sugar in a chaat-style dahi vada is easy to miss: sweetened curd plus tamarind chutney can add several teaspoons to a plate. The guideline's 90 kcal does not allow for that. Shop versions can also be salty. People managing diabetes or blood pressure should follow the advice of their doctor or dietitian on sweetened and salted snacks; for everyone else, asking for less chutney is the simple fix.
