Calories in Masala Vada

One masala vada has about 75 kcal. ICMR-NIN's Dietary Guidelines for Indians give approximately 150 kcal for 2 vadas, which is where the per-vada figure comes from. It is a rough guide: the guideline does not state the size of the vada and lists no protein, carbohydrate or fat. Thick, large or oily vadas will be above it.

What this figure covers

ICMR-NIN lists 2 masala vadas at about 150 kcal in its table of approximate values for common foods, so one vada is counted at 75 kcal. No weight or diameter is given. Masala vada, also called paruppu vadai, chana dal vada or dal vada, is shaped by hand into a flat disc, and one cook's vada can be twice the thickness of another's. The tea-stall version is often larger and darker than the home one. Use the figure as a rough guide, and expect a big, thick vada to exceed it.

The vada is built from chana dal and toor dal, soaked and ground coarsely with onion, chilli, fennel and curry leaves. Nothing else binds it: no flour and no batter. The dals supply starch together with protein and fibre, which is more than most fried snacks can claim. The rest of the energy is oil from the kadhai. Because the grind is coarse, the surface of the vada is rough and full of crevices, which gives the crunch people like and also gives the oil somewhere to lodge. Oil is far more energy-dense than dal, so even a modest amount matters.

What changes the number

    Thick or flat

    A thin, flat vada fries quickly and crisp. A thick one takes longer to cook through and carries more dal. As no size comes with the guideline, the same 75 kcal cannot hold for both; three vadas at that rate are about 225 kcal.

    How coarse the grind is

    A coarse mixture made from well-drained dal gives a firm vada. A paste ground too fine or too wet turns soft and oily in the kadhai. Draining the soaked dal thoroughly before grinding is the step that matters.

    Deep-fried or shallow-fried

    Deep frying surrounds the vada with oil. Flattened patties can be shallow-fried on a tawa with far less, or baked. If a deep-fried vada holds one more teaspoon of oil than the guideline assumes, it is about 119 kcal, not 75 kcal.

    Tea, chutney and second helpings

    Masala vada is a tea-time food, and sweet tea is its usual company. Coconut chutney adds fat. The vadas are small and come in a paper cone by the handful, so the count is easy to lose.

In a meal and in a day

One masala vada is about 4% of a sedentary man's daily energy requirement and 5% of a woman's. Two with a cup of tea, about 150 kcal for the vadas, is the usual snack. It is the third lightest per piece among the 10 fried snacks here, between medu vada at 70 kcal and puri at 80 kcal. Being made of dal, it has more substance than a flour-based fried snack, but it does not replace a meal: there is no vegetable to speak of, and the oil comes along regardless.

Ways to keep it lighter

  • Shape thin patties and shallow-fry them on a tawa with a little oil.
  • Bake or air-fry the patties, turning them once, for a drier but crisp vada.
  • Add plenty of chopped onion, dill or spinach to the dal mixture.
  • Stop at two with tea, and take the tea with less sugar.

Before you rely on the number

This is an approximate guideline figure, so use it to compare snacks, not to count precisely. A vada made of chana and toor dal is still a deep-fried food, and bought ones are often fried in oil that has been used through the day. For most people that makes it an occasional snack. Those managing diabetes, blood pressure or kidney disease should ask their doctor or dietitian how fried dal snacks fit their plan.

How many calories are in 2 masala vadas?

About 150 kcal, which is the quantity ICMR-NIN's approximate figure is given for. Three come to about 225 kcal. The guideline does not state the size of the vada, so large tea-stall vadas should be counted as more.

Is masala vada the same as medu vada?

No. Masala vada is made from coarsely ground chana and toor dal and is flat and crunchy; medu vada is made from finely ground, aerated urad dal and is soft with a hole in the centre. In ICMR-NIN's approximate figures they are close: 75 kcal and 70 kcal a piece.

Does masala vada have protein?

It is made from dal, so it does contain protein and fibre. ICMR-NIN's guideline gives only the calories, though, so no protein figure can be stated here. Remember that it is also fried, so part of its energy is oil.

Can masala vada be made without deep frying?

Yes. The mixture holds together well enough to be pressed into patties and shallow-fried, baked or air-fried. These versions take up less oil than deep frying. There is no separate guideline figure for them, so the 75 kcal applies to the usual deep-fried vada.
