Calories in Pakora

One pakora has about 35 kcal. ICMR-NIN's Dietary Guidelines for Indians put 8 pakoras at approximately 280 kcal, and the per-piece figure is that amount shared equally. The guideline does not state how big each pakora is, and gives no protein, carbohydrate or fat figure. A plate of large, thickly battered pakoras will hold more.

1 pakora is about 2% of the daily energy requirement of a sedentary adult man and 2% of a sedentary adult woman's (ICMR-NIN, 2020).

This is the approximate calorie value given in ICMR-NIN's Dietary Guidelines for Indians. The guidelines do not state the size of the piece and give no protein, carbohydrate or fat figure, so none is shown. Source: ICMR-National Institute of Nutrition. 02The number

What this figure covers

Nobody eats a single pakora, and ICMR-NIN's figure reflects that: it is given for 8 pakoras, about 280 kcal, as an approximate value. Divided evenly that is 35 kcal each, but pakoras are dropped into the oil by hand and no two are the same size. The guideline says nothing about their weight. A plate of small, lacy onion pakoras is one thing; eight heavy ones with a thick besan coat, or pakoras made around paneer, bread or potato slices, are quite another. Use the figure as a starting point for a plate of modest onion pakoras.

The ingredients here are onion, besan and oil. The onion itself contributes very little energy, since it is mostly water. The besan batter contributes starch along with the protein and fibre that any pulse flour carries. The rest is frying oil, and a pakora is well designed to hold it: its ragged, open shape gives a large surface for its size, and the batter soaks up oil as its moisture cooks off. Oil is the most energy-dense ingredient in the kitchen, so how much of it stays in the pakora decides the plate more than the vegetable inside does.

What goes into one serving

A standard recipe uses these main ingredients. Amounts are not shown, because the calorie figure above is not calculated from them.

04What moves it

What changes the number

  • 01

    Batter thickness

A thin coating that just binds the onion fries crisp and light. A thick, heavy batter means more besan and more surface to absorb oil. Adding rice flour for crunch, or soda for puffiness, changes the texture and with it how much oil is held.

  • 02

    What is inside

Onion, spinach, cabbage and chilli pakoras are mostly vegetable and air. Potato, paneer, bread and egg pakoras have a dense centre that brings its own calories on top of the batter, and they should not be counted at 35 kcal a piece.

  • 03

    The size of each piece

The guideline's 8 pakoras have no stated size. Small ones made from a spoonful of mixture are a different matter from large, fist-shaped bhajjis that hold several spoonfuls each. Counting pieces is only as accurate as the pieces are alike.

  • 04

    Oil and draining

Hot oil seals the batter quickly; lukewarm oil seeps in. If a plate soaks up one extra teaspoon of oil, that is about 44 kcal more. Draining on a rack or paper and serving at once, before the pakoras turn limp, keeps surface oil down.

06On the plate

In a meal and in a day

A single pakora is about 2% of a sedentary adult's daily energy requirement, for a man or a woman, which is why it feels harmless. The plate is the real unit: 8 pakoras, about 280 kcal, usually with chai and often on a rainy evening when a second plate follows. That is the energy of a small meal, taken as a snack. Per piece the pakora is the lightest of the 10 fried snacks in this set, below a medu vada at 70 kcal, but it is also the one eaten in the largest numbers.

Ways to keep it lighter

  • Serve a small plate and put the rest away before sitting down with tea.
  • Use more onion or spinach and just enough besan batter to hold it together.
  • Cook the same mixture in a lightly oiled appe pan or an air fryer.
  • Fry in hot oil in small batches so the pakoras crisp quickly.
  • Eat them with green chutney, and take the tea with less sugar.
07Worth knowing

Before you rely on the number

ICMR-NIN's 280 kcal for 8 pakoras is a broad estimate, and real plates differ widely in piece size and oil. The oil deserves a thought too: oil that has been reheated again and again, as at many stalls, breaks down, so pakoras fried at home in fresh oil are the better choice. People managing blood pressure, diabetes or a heart condition should check with their doctor or dietitian how often fried snacks fit their plan.

Food composition is general information, not a diet plan. Anyone managing a medical condition should plan their diet with a doctor or a registered dietitian.

08Questions

Pakora: common questions

How many calories are in a plate of pakoras?

ICMR-NIN's approximate figure is 280 kcal for 8 pakoras, or about 35 kcal each. Two pakoras are about 70 kcal and three about 105 kcal. A plate of large or thickly coated pakoras, or of paneer or bread pakoras, will be higher than that.

Are onion pakoras and bhajji the same for calories?

Broadly, yes. Pakora, pakoda, bhajji, bajji and bhajiya are regional names for vegetables fried in besan batter, and the guideline figure applies to the onion kind. What differs is the cut and the coating: whole slices dipped in thick batter hold more than loose shreds bound with a little besan.

Is air-fried pakora lower in calories?

It is, since the batter is cooked by hot air with a light brushing of oil instead of being submerged in it. The texture is drier and less lacy. No separate ICMR-NIN figure exists for air-fried pakoras, so the saving cannot be put into a number here.

Is pakora good for weight loss?

A pakora is small, but it is a fried food eaten by the plateful, and 8 of them come to about 280 kcal with little to keep you full. It can be an occasional snack in any eating pattern. For weight loss the whole day's intake is what matters, and a fixed small portion helps.
