Sabudana vada is a fasting-day favourite in Maharashtra and beyond, made at home in batches and sold at stalls during Navratri, Ekadashi and Shravan. Home vadas are usually patted flat and small; stall vadas tend to be thicker. Because the guideline is silent on size, treat the figure as a reference point. The vada is made of soaked sago pearls, boiled potato and crushed roasted peanuts, bound by hand and fried in oil. Then comes the frying oil. Sago pearls turn sticky and porous as they cook, so the outside of the vada grips oil readily. How well the sago was soaked
Sago that is soaked and drained properly makes a firm mixture. Pearls that are too wet give a loose vada that breaks in the kadhai and soaks up oil. A vada that absorbs one extra teaspoon of oil goes from 105 kcal to about 149 kcal.

The share of peanuts
Crushed peanuts give the vada its flavour and crunch, and they are energy-dense. A recipe that is heavy on peanuts is higher in calories than one that leans on potato, although it also has a little more protein.

Size and thickness
ICMR-NIN attaches no size to its figure. A thick vada the width of a palm holds more of everything than a small flat one, and it takes longer in the oil. Count large stall vadas as more than 105 kcal each.

Sweet curd and chutneys
The usual partners are curd sweetened with sugar and a peanut or coconut chutney. A teaspoon of sugar in the curd adds about 16 kcal, and nut chutneys add fat. Plain curd adds some protein, which the vada lacks.

One sabudana vada is about 5% of a sedentary man's daily energy requirement and 6% of a woman's. On a fast day, though, vadas are often a meal, and three come to about 315 kcal before the curd. A plate like that is high in starch and fat and short of protein, fibre and vegetables, which is why a fast built around sabudana can leave people hungry again soon. Curd, milk, fruit and a handful of roasted peanuts or makhana round it out. Among the 10 fried snacks here it is eighth lightest, just above an aloo bonda at 100 kcal.
Ways to keep it lighter
- Shallow-fry flat vadas on a tawa, or cook them in a lightly oiled appe pan.
- Drain the soaked sago thoroughly so the vadas hold together and take up less oil.
- Keep to two vadas and add a bowl of plain curd and some fruit.
- Use plain curd, not sweetened curd, as the dip.
Before you rely on the number
Fasting foods are easy to think of as light, but a sabudana vada is starch fried in oil, and the 105 kcal is only a rough guide to one piece. Sago is quick-digesting starch, so people with diabetes who fast should plan the day's food and medicines with their doctor or dietitian beforehand, and so should anyone who is pregnant or has a long-term medical condition.
