These figures are from the Indian Nutrient Databank (INDB), which calculates each dish from a standard recipe using Indian food composition data. They describe that recipe and that serving: a larger portion, or more oil, ghee or sugar, gives more. Source: Vijayakumar A, Dubasi HB, Awasthi A, Jaacks LM. What this figure covers
Panchmel, or panchratna, dal is the five-dal dish of Rajasthan, traditionally eaten with baati and plenty of ghee. The recipe used here keeps to that spirit. For 4 portions it takes 50 g of chana dal and 44 g each of urad, moong, whole masoor and toor, with 100 g of tomato, 60 g of onion and 13 teaspoons of ghee. The source does not specify the bowl, so the serving is one of those 4 portions: about 11 g or 12 g of each dal and a little over 3 teaspoons of ghee. That is a main-dish helping, well beyond a side katori.
Fat supplies 44% of the energy, carbohydrate 39% and protein 17%. The proportions resemble an ordinary tadka dal; the scale does not. Each portion holds considerably more raw dal than a plain home bowl and more fat as well, which is how it reaches 335 kcal and stands last of 20 when the dals are ranked from the lightest. That fat is nearly all ghee, and so largely saturated. The five pulses bring 13.9 g of protein and 9.6 g of fibre, the best protein figure in the group.
What goes into one serving
The recipe INDB analysed makes 4 bowls. These are its main ingredients; spices, salt and water are left out.
| Ingredient | In the recipe | In 1 bowl of panchmel dal |
|---|---|---|
| Bengal gram (chana) | 50 g | 12 g |
| Black gram (urad) | 44 g | 11 g |
| Green gram (moong) | 44 g | 11 g |
| Whole masoor (lentil) | 44 g | 11 g |
| Toor dal (arhar) | 44 g | 11 g |
| Tomato | 100 g | 25 g |
| Onion | 60 g | 15 g |
| Ghee | 13 tsp | 3 1/4 tsp |
What changes the number
- 01
The ghee
Thirteen teaspoons of ghee go into the pot, a little over 3 teaspoons a portion, and each teaspoon is about 45 kcal. No other ingredient in the dish is as easy to change. One more teaspoon on top, as is usual with baati, takes a portion to about 380 kcal.
- 02
How many the pot serves
The figure assumes 4 portions. Shared between more people as one dal among several dishes, each helping shrinks; half a portion is about 168 kcal. Served as the main dish, a second ladle is common, and two portions come to 670 kcal.
- 03
The mix of dals
Which five dals are used matters little for calories, since dry pulses are similar in energy. Whole pulses raise the fibre. The total weight of dal in the pot is what counts.
- 04
Baati and churma on the side
Panchmel dal is seldom eaten alone. Baati is baked wheat dough dipped in ghee, and churma adds sugar as well. Both are outside the 335 kcal, and together they can outweigh the dal.

In a meal and in a day
One portion of panchmel dal is about 16% of a sedentary man's daily energy requirement and 20% of a woman's, the largest share of any dal in this comparison. Two portions come to 670 kcal and 27.8 g of protein, and three reach 1,005 kcal. For that energy it gives a lot back: 13.9 g of protein and 9.6 g of fibre in a single portion. With baati, roti or rice the protein of the meal is more complete. On a day that includes dal baati, lighter meals before and after keep the total in check.
Ways to keep it lighter
- Cook the pot with a third of the ghee and add a small spoon at the table for aroma.
- Serve half a portion, about 168 kcal, when rice, roti and vegetables are also on the plate.
- Keep the five dals and the garlic, cumin and chilli tadka; the flavour comes from them as much as from the ghee.
- Pair panchmel dal with plain phulka on ordinary days and keep ghee-soaked baati for occasions.
Before you rely on the number
A portion carries 16.1 g of fat, nearly all of it ghee and so largely saturated, and that is before any ghee on the baati. Anyone advised to watch saturated fat or cholesterol, or living with heart disease, should ask their doctor or dietitian how panchmel dal fits their plan. The dal itself is nourishing food; the ghee is the part to keep an eye on.

Panchmel Dal: common questions
Why is panchmel dal so high in calories?
Because of the amount, not the pulses. Each portion in the reference recipe has about 11 g or 12 g of five different dals and a little over 3 teaspoons of ghee, which adds up to 335 kcal. A plain moong dal bowl in the same data is 139 kcal, made with far less dal and fat.
How much protein is in panchmel dal?
About 13.9 g in one portion, the highest of the 20 dals and pulse curries compared here. Protein is 17% of the energy, the usual share for a dal, so the high figure reflects a big portion more than a special quality of the five-dal mix.
How many calories are in 2 bowls of panchmel dal?
About 670 kcal, with 27.8 g of protein, 64.4 g of carbohydrate and 32.2 g of fat, if both are full portions. That is a full meal's energy from the dal alone, before baati or rice.
Is panchmel dal good for weight loss?
As this recipe makes it, panchmel dal is rich: 335 kcal a portion with 44% from fat. Cooked with much less ghee and served as half a portion, it becomes a filling, high-fibre dal. What happens to weight depends on the whole day's food, and here on the baati and churma served with it.
