The recipe behind the figure uses 100 g of rice, 30 g of urad dal and 25 g each of cabbage, tomato, carrot and onion, with 1 tablespoon of oil and 1 tablespoon of butter, to make 4. The source does not specify a diameter, so a serving is one of those 4 portions: about 25 g of rice, 7.5 g of dal and 3/4 teaspoon each of oil and butter. Many home uttapams are poured thicker, from more batter, and would be larger than this.
Carbohydrate supplies 58% of the energy, fat 32% and protein 10%. The rice and dal account for the starch and the protein.
