Coconut Rice

Coconut rice, thengai sadam, is cooked rice folded into freshly grated coconut warmed in a tempering of mustard seeds, dals, cashews and curry leaves. The South Indian version uses grated coconut, not coconut milk, and the coconut is warmed only briefly so it stays white and sweet rather than toasting to brown.

Ingredients

  • 3 cups cooked rice, cooled
  • 1 cup freshly grated coconut
  • 2 tablespoons coconut oil or groundnut oil
  • 1 teaspoon mustard seeds
  • 1 tablespoon chana dal and 1 teaspoon urad dal
  • 10 cashew nuts, halved
  • 2 dried red chillies and 2 green chillies, slit
  • 12 curry leaves
  • 1 inch ginger, finely chopped
  • A pinch of asafoetida
  • Salt to taste

Coconut is high in saturated fat, though of a particular kind: much of it is medium chain fatty acid, which is metabolised differently from the long chain saturated fat in dairy and meat. That does not make it a health food, and the evidence for special metabolic benefit is weaker than marketing suggests. Fresh coconut also brings fibre and manganese. A serving is reasonable; a habit of large portions is where the saturated fat adds up.

Method

    Spread the cooked rice on a wide plate to cool and separate.

    Heat the oil, add the mustard seeds and wait for them to finish popping.

    Add the chana dal, urad dal and cashews and fry until all three are pale gold.

    Add the dried chillies, green chillies, curry leaves, ginger and asafoetida and let them crackle for 20 seconds.

    Lower the flame to its minimum and add the grated coconut. Warm it for 2 minutes only, stirring constantly, until it smells fragrant but is still white.

    Add the cooled rice and salt and fold gently until evenly mixed.

    Take off the heat and cover for 5 minutes so the coconut aroma settles into the rice.

Why should the coconut not be browned?

Because toasted coconut is a different ingredient with a different purpose. Thengai sadam is meant to taste fresh, sweet and milky, and browning drives off the delicate aroma and replaces it with a nutty, roasted note that belongs in a chutney or a sweet. Two minutes on the lowest flame is enough to warm the coconut through and release its fragrance. The moment you see colour, you have made something else.

Fresh coconut or desiccated?

Fresh, and the difference is not marginal. Desiccated coconut has had its moisture and much of its oil removed, so it absorbs liquid from the rice and turns the dish dry and slightly fibrous. If fresh is genuinely unavailable, soak desiccated coconut in two tablespoons of warm milk or water for ten minutes before using, which restores some of the texture. Frozen grated coconut, widely sold now, is a much better substitute than dried.

Why does South Indian coconut rice use no coconut milk?

Because the two make different dishes. Grated coconut folded through rice gives texture and pockets of sweetness with the grains staying separate. Coconut milk cooked with raw rice, which is the Southeast Asian and some Kerala approach, gives a soft, creamy, uniformly rich result. Thengai sadam as made in Tamil Nadu and Karnataka is firmly the first kind, and adding milk to it produces something closer to a nasi lemak than to the traditional dish.

Is coconut fat bad for you?

The honest answer is that it is more complicated than either side claims. Coconut is high in saturated fat, and saturated fat raises LDL cholesterol, which is well established. It is also true that a large share of coconut's saturated fat is lauric acid, a medium chain fatty acid metabolised somewhat differently, and that populations eating traditional coconut-heavy diets show low rates of heart disease. What that does not support is treating coconut oil as a health supplement. As part of a dish eaten in normal portions, it is fine; as a spoonful taken daily for benefit, the evidence is not there.

What makes this a good travel and festival food?

It keeps without refrigeration for several hours, it eats well at room temperature, and it contains nothing that spoils fast. That is the same logic behind lemon rice and tamarind rice, and the three are often packed together. Coconut rice is also a common prasadam and festival offering across southern India, particularly at temple kitchens, where large quantities need to be made ahead and served over hours.

How do you keep the rice grains separate?

Cool the rice first and fold rather than stir. Warm rice is soft and its surface starch is still sticky, so anything you mix through it crushes grains. Rice cooked an hour ahead and spread out to cool firms up considerably. Use a flat spoon and lift from underneath rather than stirring in circles, which is the technique for every South Indian mixed rice. Lemon rice works on exactly the same principle.

What should be served alongside?

Something sharp and something crisp. A tangy pickle, a papad and a bowl of curd is the standard combination, and it works because coconut rice is mild, sweet and rich and needs contrast rather than more richness. A simple vegetable poriyal on the side turns it into a full meal. What it does not want is another coconut-based dish, which is a common mistake at South Indian meals where coconut appears in several items at once.

Can I use desiccated coconut for coconut rice?
