Lemon Rice

Lemon rice, called chitranna in Karnataka, is cooked rice tossed in a tempering of mustard seeds, urad dal, chana dal, curry leaves and turmeric, finished with lemon juice off the heat. It is a leftover-rice dish by design, keeps well without refrigeration for several hours, and is one of the classic South Indian lunchbox and travel foods.

Ingredients

  • 3 cups cooked rice, cooled and separated
  • Juice of 2 lemons
  • 2 tablespoons oil, preferably groundnut or sesame
  • 1 teaspoon mustard seeds
  • 1 tablespoon chana dal and 1 teaspoon urad dal
  • 2 tablespoons raw peanuts
  • 2 dried red chillies and 2 green chillies, slit
  • 12 curry leaves
  • 1/2 teaspoon turmeric powder
  • A pinch of asafoetida
  • Salt to taste

The dals in the tempering are not decoration: urad and chana dal add a small amount of protein and a useful amount of fibre and crunch to what would otherwise be plain rice. Peanuts, if added, contribute more protein and unsaturated fat. Lemon juice supplies vitamin C, which enhances absorption of the plant iron in the dals, and it is added off the heat precisely so that vitamin C is not destroyed.

Method

    Spread the cooked rice on a wide plate to cool completely. Warm rice clumps and breaks when tossed, so this is worth the wait.

    Heat the oil and add the mustard seeds. Wait until they finish popping before anything else goes in.

    Add the chana dal, urad dal and peanuts and fry on a medium flame until all three are golden, about 2 minutes. They must be properly crisp or they will go soft in the rice.

    Add the dried red chillies, green chillies, curry leaves and asafoetida, and let them crackle for 20 seconds.

    Take the pan off the heat and stir in the turmeric, which burns easily on a hot flame.

    Add the cooled rice and salt, and fold gently until every grain is evenly yellow.

    Take the pan off the heat completely, then pour in the lemon juice and fold again. Lemon juice added on the flame turns bitter.

Why must the lemon juice be added off the heat?

Two reasons, one of flavour and one of nutrition. Heated citrus juice develops a bitter, slightly metallic edge as its volatile aromatics drive off and its acids concentrate, so the fresh brightness the dish is named for disappears. And vitamin C is heat labile, so a good part of it is destroyed by contact with a hot pan. Taking the pan off the flame and folding the juice through costs nothing and preserves both.

Why does lemon rice need cold rice?

Because hot rice is soft, sticky and fragile. Freshly cooked grains have absorbed their water and their surface starch is still gelatinised, so folding anything through them crushes grains and produces a paste. Rice that has cooled, and ideally sat for a few hours, has firmed up and separated. This is why lemon rice is traditionally a way of using yesterday's rice rather than a reason to cook fresh.

What do the two dals do in the tempering?

They provide texture, which is the thing people miss when they omit them. Chana dal and urad dal fried in oil turn crisp and nutty and stay that way in the finished dish, giving a crunch against the soft rice. They also add a small amount of protein and fibre. Fry them until genuinely golden; underfried dal goes leathery once it sits in the rice rather than crisp.

When should turmeric be added?

Off the heat, or on a very low flame. Turmeric burns easily and turns bitter and dull brown, and because it goes in near the end of a hot tempering it is more exposed than most spices. Adding it after removing the pan gives you a clean yellow colour and no bitterness. This is a small detail that separates a bright lemon rice from a muddy one.

Why is lemon rice such a good travel food?

Because the acid and the oil between them are mildly preservative, and because there is nothing in it that spoils quickly. No dairy, no fresh vegetables with high water content, no gravy. It also eats perfectly well at room temperature, which most Indian rice dishes do not. That combination is why it has been the standard train and pilgrimage food across southern India for generations, alongside curd rice and tamarind rice.

How does it differ from tamarind rice and curd rice?

All three are tempered rice dishes built for the same purpose, and they differ in their souring agent. Lemon rice uses fresh citrus and is the brightest and simplest. Tamarind rice uses a cooked tamarind paste with a much larger spice load and keeps the longest. Curd rice uses dairy, is cooling rather than sour, and does not travel as well in heat. A traditional travel tiffin often contains all three.

Can it be made more substantial?

Yes, and the usual additions are peanuts, cashews and more dal. Doubling the peanuts turns a side dish into something closer to a meal, adding both protein and fat. Some households add grated carrot or green peas, which is not traditional in most versions but works. What does not work is adding vegetables with high water content, which make the rice soggy and shorten how long it keeps.

What people ask about Lemon Rice

Why does my lemon rice taste bitter?

Either the lemon juice was added while the pan was still on the heat, or the turmeric burnt. Heated citrus turns bitter as its aromatics drive off, and turmeric scorches easily. Take the pan off the flame before adding either, and fold them through the rice rather than cooking them in.

Can I use freshly cooked rice for lemon rice?

It is much better with cooled rice. Hot grains are soft and sticky and break into a paste when you fold the tempering through. If you must use fresh rice, spread it on a wide plate for at least twenty minutes, add a teaspoon of oil, and let it cool and firm up before mixing.

How long does lemon rice keep?

Six to eight hours at room temperature in a closed container, which is why it is a classic travel food. The acid and oil are mildly preservative and there is no dairy or gravy to spoil. Refrigerated it keeps for two days, though the rice firms up and it is best brought back to room temperature before eating.

What is the difference between lemon rice and chitranna?

They are the same dish under different names. Chitranna is the Kannada name used in Karnataka; lemon rice or elumichai sadam is the Tamil equivalent. Regional versions vary slightly in the amount of dal and whether peanuts, coconut or grated carrot are included, but the method is identical.
