Green peas (fresh): nutrition per 100 g
Per 100 g, fresh green peas give 81 kcal, 7.2 g protein, 11.9 g carbohydrate and 6.3 g fibre, according to IFCT 2017. The protein ranks 3rd of 39 vegetables and covers 16 per cent of a woman's daily requirement, and thiamine ranks 2nd. With 38.4 mg vitamin C as well, matar sits halfway between a vegetable and a dal, which is why it makes such a filling sabzi.
About green peas (fresh)
Fresh green peas are the winter treat of north India. From December to February, pods pile up in markets across Uttar Pradesh, Punjab, Himachal Pradesh and Madhya Pradesh, and families sit together shelling them. IFCT 2017 records names in 14 languages: matar in Hindi, hare matar in Punjabi, motor shuti in Bengali, vatana in Gujarati and Marathi, batani in Kannada and Telugu, paccha pattani in Tamil and Malayalam, matara in Odia and kaza in Kashmiri.
Peas sweeten almost every winter dish. Matar paneer and aloo matar are everyday staples, keema matar is a Sunday favourite, and pav bhaji relies on them. Uttar Pradesh makes nimona, a curry of coarsely ground fresh peas, and matar ki kachori; Bengal makes koraishutir kochuri, puris stuffed with spiced pea paste. In the south, pattani goes into kurma, pulao and upma. Frozen peas now make them available all year.

Before you plan around it
Out of season, some dried peas are soaked and coloured bright green with malachite green or other dyes and sold as fresh; FSSAI has repeatedly warned about this. Unnaturally vivid peas that stain water or fingers should be avoided; buying pods and shelling them, or using reputable frozen peas, is safer. Peas are starchier than leafy vegetables, so people with diabetes should count a large serving of matar as part of the meal's carbohydrate. Canned peas are often salted and sugared; rinse them before use.

Are green peas high in protein?
For a vegetable, yes. IFCT 2017 lists 7.2 g protein per 100 g of fresh green peas, 3rd among 39 vegetables. That is less than dried pulses, but a good addition to a meal with paneer, dal or curd.
Are green peas good for diabetes?
Peas bring 6.3 g fibre and 7.2 g protein per 100 g, which slow digestion, but they also have 11.9 g carbohydrate. They fit a diabetes diet in moderate portions, counted as part of the meal's starch. Plan portions with your doctor or dietitian if you take diabetes medicines.
Are frozen peas as nutritious as fresh?
Frozen peas are blanched and frozen within hours of picking, so they keep most of their nutrients and are often comparable to fresh peas bought a few days after harvest. IFCT 2017 figures on this page are for fresh peas.
How can you tell if green peas are artificially coloured?
Soak a handful in water for half an hour. If the water turns green or the peas leave a green stain on your fingers or a tissue, they may be dyed. FSSAI recommends this simple check and advises against eating dyed peas.
