Oats Upma
Oats upma is rolled oats cooked in a South Indian tempering of mustard seeds, dals, curry leaves and vegetables, in place of the semolina used in traditional upma. The technique difference that matters is dry roasting the oats first, which stops them dissolving into porridge when the water goes in.

Ingredients
- 1 cup rolled oats, not instant
- 1 onion, finely chopped
- 1 carrot, finely diced
- 1/4 cup green peas
- 2 tablespoons oil
- 1 teaspoon mustard seeds
- 1 tablespoon chana dal and 1 teaspoon urad dal
- 2 green chillies, chopped
- 10 curry leaves
- 1 inch ginger, grated
- 1.5 cups hot water
- 1 tablespoon lemon juice
- Salt to taste

Oats contain beta-glucan, a soluble fibre with genuinely good evidence behind it: regular intake lowers LDL cholesterol, and regulatory authorities in several countries permit a health claim on that basis. Beta-glucan also slows gastric emptying, which flattens the post-meal glucose rise and keeps you full. Against semolina upma, which is refined wheat, this is a substantially better breakfast for both cholesterol and blood sugar.
Method

Dry roast the oats in a pan on a medium flame for 3 to 4 minutes until they smell nutty and darken very slightly. Set aside. This step is what keeps them from turning to mush.

Heat the oil, pop the mustard seeds, then fry the chana dal and urad dal until golden.

Add the green chillies, curry leaves and ginger, then the onion, and cook for 4 minutes until soft.

Add the carrot and peas with a splash of water, cover, and cook for 5 minutes until just tender.

Pour in the hot water with salt and bring to a rolling boil.

Add the roasted oats all at once, stirring continuously for a minute, then lower the flame and cover for 2 minutes.

Take off the heat, rest covered for 3 minutes, then fluff and finish with lemon juice.

Why must the oats be dry roasted?
Because rolled oats are steamed and flattened during manufacture, and their starch gelatinises very readily. Dropped straight into boiling water they absorb it almost instantly and collapse into porridge. Three or four minutes in a dry pan drives off surface moisture and firms the outer layer, so each flake holds its shape long enough to cook without dissolving. This is the single difference between oats upma and a savoury porridge.
Which type of oats should be used?
Rolled oats, sometimes sold as old-fashioned oats. Instant or quick oats are cut thinner and pre-cooked further, and they will turn to paste no matter how carefully you roast them. Steel-cut oats have the opposite problem: they need twenty-five minutes of simmering and will stay hard in the time this recipe allows. Rolled oats are the only variety that behaves properly here.
What is the right water ratio?
One and a half cups to one cup of oats, which is less than most packets suggest for porridge. Upma should be fluffy and separate, not creamy, and the vegetables release moisture of their own. Use hot water rather than cold, because adding cold water drops the pan temperature and gives the oats time to sit and soften before cooking begins.
Does oats upma actually help cholesterol?
The evidence for beta-glucan is among the better established in nutrition. It is a soluble fibre that forms a viscous gel in the gut, binds bile acids and increases their excretion, which forces the liver to draw on circulating cholesterol to make more. Multiple trials support a modest but real reduction in LDL, and regulators in the United States and Europe permit a health claim on that basis. Around three grams of beta-glucan a day is the quantity associated with the effect, which is roughly what a large bowl of oats provides.
Is it better than semolina upma?
For most people, yes. Semolina is refined wheat with the bran and germ removed, so it digests quickly and offers little fibre. Oats keep their bran, carry beta-glucan and produce a flatter glucose response. The two taste different rather than one being a poor imitation, and the oats version has a slightly softer bite. How do you add protein to it?
The dals in the tempering contribute a little, but not much at a tablespoon. The effective additions are a handful of roasted peanuts or cashews folded in at the end, a boiled egg on the side, or a bowl of curd. Some cooks add sprouted moong with the vegetables, which works well and raises both protein and fibre. Oats themselves carry more protein than rice or semolina but not enough to make this a protein-led meal.
Can it be made ahead?
Not well. Oats upma continues to absorb moisture as it sits and goes progressively softer and stickier, and reheating dries the edges while the centre stays claggy. What you can do is chop the vegetables and dry roast a batch of oats in advance, which reduces the morning to about ten minutes. Roasted oats keep for weeks in an airtight jar.
