Chicken Biryani

Chicken biryani is layered rice and marinated chicken cooked together under sealed steam. There are two methods: kacchi, where raw marinated chicken cooks under the rice during dum, and pakki, where the chicken is cooked first and then layered. Kacchi gives a better texture and is harder to get right; pakki is more reliable at home.

Ingredients

  • 800 g bone-in chicken, preferably thigh and drumstick, skin removed
  • 2 cups basmati rice, soaked 30 minutes
  • 1 cup thick curd
  • 3 onions, sliced thin and fried brown
  • 2 tablespoons ginger garlic paste
  • 2 tablespoons lemon juice
  • 1/2 cup mint leaves and 1/2 cup coriander leaves
  • 4 tablespoons ghee
  • Whole spices: 1 bay leaf, 5 cloves, 5 green cardamom, 1 inch cinnamon, 1 black cardamom, 1 teaspoon shahi jeera
  • 1 teaspoon red chilli powder, 1 teaspoon garam masala
  • A generous pinch of saffron in 3 tablespoons warm milk
  • Salt to taste

Chicken makes this a genuinely protein-led rice dish, unlike its vegetarian counterpart, with a serving carrying a meaningful quantity of complete protein along with iron, zinc and B vitamins. The variable is fat: the ghee used for the birista and the layers adds up quickly, and using thigh meat with skin adds more again. Skinless thigh, four tablespoons of ghee for the whole pot, and a generous curd marinade give the flavour without excess.

Method

    Marinate the chicken with curd, ginger garlic paste, lemon juice, chilli powder, garam masala, salt and half the fried onions for at least 2 hours, ideally overnight.

    Boil salted water with the bay leaf and half the whole spices, add the drained rice and cook 5 to 6 minutes until a grain still has a firm white core. Drain at once.

    For the pakki method, cook the marinated chicken in a heavy pot with 2 tablespoons of ghee for 15 minutes, until it is nearly done and the gravy has thickened.

    For the kacchi method, put the raw marinated chicken straight into the pot with the ghee and skip this stage. It needs a longer dum and a very even low flame.

    Layer the part-cooked rice over the chicken. Scatter the remaining fried onions, mint and coriander, then drizzle the saffron milk and the remaining ghee over the top.

    Seal with a tight lid or dough, put a tawa underneath, and cook on the lowest flame for 25 minutes for pakki, 40 to 45 for kacchi.

    Rest 10 minutes. Check the thickest piece reaches 75C at the bone before serving, and fold gently rather than stirring.

What is the difference between kacchi and pakki biryani?

Kacchi means raw: the marinated chicken goes into the pot uncooked, the rice is layered over it, and both cook together during a long dum. The meat cooks in its own juices and the rice absorbs them, which gives the most integrated result. Pakki means cooked: the chicken is browned and part-cooked first, then layered, and the dum is shorter. Hyderabadi biryani is classically kacchi. Pakki is what most home cooks should attempt first, because a kacchi dum that is too short leaves undercooked chicken.

How do you know the chicken is properly cooked?

Check the temperature at the bone, not the timing. The thickest part of a thigh should reach 75C, and a thermometer is worth more here than any visual test, because rice on top makes the usual cues unavailable. Juices running clear is a rough guide but an unreliable one. This matters more with kacchi biryani than any other Indian dish, because the meat is hidden under a sealed lid for the whole cook and you cannot check it mid-way without releasing the steam.

Why bone-in chicken rather than boneless?

Flavour and forgiveness. Bones release collagen and marrow compounds into the gravy during the long steam, which is a large part of what a good biryani tastes of. Bone-in thigh also tolerates the extended cooking far better than breast, which dries out. Boneless breast in a biryani is the most common cause of dry, stringy meat, and no amount of marinade fixes it.

What does the curd marinade do?

It tenderises and it carries. The lactic acid in curd works slowly on the surface proteins of the meat, and its fat and water hold the spices against the chicken during hours in the refrigerator. Two hours is the minimum for any effect; overnight is noticeably better. Do not use a low fat curd, which splits more readily under heat and gives a thinner gravy.

Why does the rice need to be cooked in so much water?

Because you are boiling it like pasta, not steaming it. A large volume of well salted water lets the grains move freely, cook evenly and take on salt throughout, and it lets you drain them at exactly the right second. Cooking rice in measured water for a biryani gives you no control over the moment you stop it, which is the one thing that matters at this stage.

Is chicken biryani healthy?

It is a complete meal in a way that vegetable biryani is not, with a substantial quantity of complete protein, iron, zinc and B12 alongside the rice. Whether it is healthy depends on the fat. A restaurant portion can carry a great deal of ghee, and the rice quantity is often generous. Made with skinless thigh, four tablespoons of ghee for six servings, and eaten with raita and salad rather than a second helping, it is a reasonable main. What should be served with it?

Raita and a sharp salad, and nothing else. The raita is not decoration: its acidity and coolness cut the ghee, and its dairy protein rounds out the meal. Onion and mint raita is the standard for good reason. Adding a curry alongside, which happens at large meals, muddles a dish that has already been carefully layered.

The flame was too high and the lid was not sealed. Steam needs to travel upward through the rice, and it can only do that if it cannot escape. Seal the lid with foil or dough, put a tawa between pot and flame, and use the lowest heat available. A high flame scorches the base before the top has cooked.
