Quinoa Upma

Quinoa upma is quinoa cooked in a South Indian tempering of mustard seeds, dals, curry leaves and vegetables in place of semolina. Quinoa must be rinsed thoroughly before cooking to remove saponins, the bitter coating on the seed, and it needs a two to one water ratio and a firm rest at the end.

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 onion, chopped
  • 1 carrot, diced, and 1/4 cup green peas
  • 2 tablespoons oil
  • 1 teaspoon mustard seeds
  • 1 tablespoon chana dal and 1 teaspoon urad dal
  • 2 green chillies, chopped
  • 10 curry leaves
  • 1 inch ginger, grated
  • 1 tablespoon lemon juice
  • Salt to taste

Quinoa is one of very few plant foods containing all nine essential amino acids in useful proportions, which makes it a complete protein and unusual among grains. It carries roughly 4 grams of protein per 100 grams cooked, along with magnesium, iron and fibre, and it is gluten free. Against semolina upma this is a substantial improvement in both protein quality and quantity.

Method

    Rinse the quinoa in a fine sieve under running water for a full minute, rubbing the seeds between your fingers, until the water runs clear and stops foaming.

    Dry roast the rinsed quinoa in a pan for 3 minutes to drive off the surface water and bring out a nutty flavour.

    Heat the oil, pop the mustard seeds, then fry the chana dal and urad dal until golden.

    Add the chillies, curry leaves, ginger and onion and cook for 4 minutes.

    Add the carrot and peas and cook for 3 minutes more.

    Add the roasted quinoa and the water with salt, bring to a boil, then cover and simmer on a low flame for 15 minutes.

    Rest off the heat, still covered, for 5 minutes, then fluff with a fork and finish with lemon juice. The germ should have uncurled into a visible white spiral.

Why must quinoa be rinsed?

Because the seed is coated in saponins, bitter compounds the plant produces to deter insects and birds. They are water soluble and mostly wash off, but they are genuinely unpleasant and are the reason people who tried quinoa once and disliked it usually disliked it. Rinse for a full minute under running water, rubbing the seeds, until the water runs clear and stops producing foam. The foam is the saponins, and it is a reliable indicator.

Is pre-rinsed quinoa good enough?

Usually, but rinse it anyway. Packets marked pre-washed have generally had most of the saponin removed, though the thoroughness varies by brand and batch. Thirty seconds under the tap costs nothing and removes any doubt. It also washes off dust from storage, which is worth doing with any bulk grain.

How do you know when quinoa is cooked?

The germ separates from the seed and uncurls into a small white spiral, which is visible to the naked eye. That is a much more reliable indicator than time, since it accounts for variation in the quinoa and the heat. The grain should be tender with a slight pop when you bite it. Overcooked quinoa loses that texture and becomes uniformly soft.

Is quinoa really a complete protein?

Yes, and the claim is unusually well founded for a food marketing term. Most plant proteins are limiting in one or more essential amino acids, typically lysine in grains and methionine in pulses, which is why Indian cuisine pairs rice with dal. Quinoa contains all nine essentials in proportions close to what the body needs, which puts it in a small group alongside soy and amaranth. Is it actually better than Indian grains?

For protein quality, clearly. For everything else, the picture is more even than the marketing suggests. Ragi has considerably more calcium, bajra more iron, and both cost a fraction as much and have been eaten here for millennia. Quinoa is a genuinely good food that has been oversold as a superfood. If you want a high-protein grain breakfast and can afford it, quinoa is excellent; if the goal is nutrient density per rupee, Indian millets are hard to beat.

What water ratio does quinoa need?

Two cups to one cup of quinoa, which is more than many packets suggest. Less than that and the germ does not uncurl properly and the texture stays chalky. The five minute covered rest at the end is not optional either: it lets the remaining moisture distribute so the top is not drier than the bottom.

Can it be made ahead?

Better than most upmas. Quinoa holds its texture when refrigerated and reheats without going sticky, which semolina and vermicelli do not. Cook a batch of plain quinoa at the start of the week and make the tempering fresh in five minutes each morning. This is the most practical way to eat it regularly, since the fifteen minute cooking time is otherwise the obstacle on a weekday.

Why does my quinoa taste bitter?

It was not rinsed enough. Quinoa seeds carry saponins, bitter natural compounds that wash off in water.
