Fresh, frozen or dried peas
The recipe uses fresh green peas. Frozen peas are a close stand-in. Dried peas, soaked and boiled, are a denser food, and a filling made from them carries more energy and protein spoon for spoon.

Peas crushed to a coarse paste spread evenly and let the dough be rolled thin. Whole peas poke through, so cooks compensate with thicker dough, and the extra flour raises the count.
