What this figure covers
The standard recipe makes 2 rotis from 60 g of maize, 20 g of grated radish and 2 tablespoons of ghee. Each roti therefore has 30 g of maize, 10 g of radish and 1 tablespoon of ghee. Two things follow. The roti is small: 30 g of flour is well under what goes into the thick makki ki roti patted out by hand in many Punjabi kitchens. And the ghee is generous, more than most people would count for a single roti. A larger roti with only a light smear of ghee could arrive at a similar figure by a completely different route.
Fat supplies 58% of the energy, carbohydrate 37% and protein just 5%. In other words, more of this roti's calories come from the ghee than from the maize. Ghee is mostly saturated fat, so the roti's saturated fat comes from the same place. The maize brings the starch and most of the 4.4 g of fibre, and very little protein: at 3 g, the roti is near the bottom of the 15 breads compared here for protein while sitting second from the top for energy, level with a paneer paratha at 224 kcal.

The ghee, by far
A tablespoon is three teaspoons, and each teaspoon of ghee is about 45 kcal. The recipe counts that much for every roti. A roti cooked dry on the tawa and touched with a little ghee at the end has only a fraction of this fat, and its calories fall accordingly.

The figure already contains a tablespoon of ghee. If more is spooned on when serving, one extra teaspoon takes the roti to 269 kcal and two take it to 314 kcal. White butter on top works the same way.

Thickness of the roti
Maize dough has no gluten, so it is patted thick to stop it cracking. A hand-patted roti can hold far more than 30 g of flour, and the flour part of the calories grows with it.

The recipe kneads in 10 g of grated radish. Some cooks add methi or bathua. These bind the dough and add a little fibre, with next to no effect on the calories.

In a meal and in a day
Makki ki roti is rarely eaten without sarson ka saag, and the saag usually brings its own ghee or butter. A plate of two rotis, saag, white butter and jaggery is therefore a rich winter meal. A glass of chaas or a bowl of curd adds the protein the roti lacks, and the saag supplies the greens.
Ways to keep it lighter
- Cook the roti dry on the tawa and add a single teaspoon of ghee at the end, in place of a tablespoon.
- Choose between ghee on the roti and butter on the saag, not both.
- Knead grated radish or chopped methi into the dough, which helps it bind without extra fat.
- Have one roti with a larger helping of saag and a bowl of curd.
Before you rely on the number
The thing to notice is the saturated fat. The tablespoon of ghee in one small roti supplies nearly all of its 14.3 g of fat, and ghee is largely saturated and carries cholesterol. With the buttered saag that traditionally comes with it, a meal of two or three rotis is high in saturated fat. Anyone advised by a doctor or dietitian to limit saturated fat or salt for cholesterol, blood pressure or heart disease should keep to that advice and go easy on the ghee.

Is makki ki roti good for weight loss?
As this recipe makes it, it is one of the heaviest breads in the comparison: 224 kcal, 58% of it from fat, and only 3 g of protein. Made with a teaspoon of ghee in place of a tablespoon it is a far lighter food with useful fibre, 4.4 g. Weight change depends on what the whole day adds up to.
