Oil on the tawa
Each paratha in the recipe is cooked with 2 teaspoons of oil, and a teaspoon is about 44 kcal. An extra teaspoon of oil makes it about 225 kcal; a teaspoon of ghee on top, about 226 kcal. Cooking with less fat than the recipe does lowers the figure in the same way.

How wet the cauliflower is
Grated cauliflower releases water once it is salted. Cooks who do not squeeze it out often need a thicker layer of dough to stop the paratha tearing, which adds flour and calories. A dry, well-squeezed filling lets the dough be rolled thin.

Some kitchens stuff the cauliflower raw with spices; others fry it in oil first. A filling cooked in oil carries that oil into the paratha in addition to what goes on the tawa.
