Calories in Vegetable Biryani

One plate of vegetable biryani has about 527 kcal, with 9.5 g of protein, 56 g of carbohydrate and 28.7 g of fat. The figure is from the Indian Nutrient Databank, for a plate made from 50 g of raw rice, mixed vegetables, 50 g of onion and 2 tablespoons of oil. Half the energy is fat, mostly from that oil.

01The figures

Nutrition in 1 plate of vegetable biryani

Nutrients in Vegetable Biryani, in one serving and in two

Protein9.5 g19 g
Carbohydrate (available)56 g112 g
Total fat28.7 g57.4 g
Dietary fibre10 g20 g
Sugars6.5 g13 g

Of this energy, about 43% comes from carbohydrate, 50% from fat and 7% from protein.

1 plate of vegetable biryani is about 25% of the daily energy requirement of a sedentary adult man and 32% of a sedentary adult woman's (ICMR-NIN, 2020).

These figures are from the Indian Nutrient Databank (INDB), which calculates each dish from a standard recipe using Indian food composition data. They describe that recipe and that serving: a larger portion, or more oil, ghee or sugar, gives more. Source: Vijayakumar A, Dubasi HB, Awasthi A, Jaacks LM. 02The number

What this figure covers

The recipe makes 2 plates from 100 g of raw rice, 100 g of onion, 50 g each of cauliflower, French beans, peas, carrot, potato and tomato, and 4 tablespoons of oil. One plate therefore holds 50 g of raw rice, 25 g of each vegetable and 2 tablespoons of oil. That is a modest amount of rice, less than a restaurant heaps on one plate, cooked with a generous amount of fat. A takeaway biryani is normally a far bigger portion of rice than this, often meant for more than one person, so the figure cannot be stretched to cover a full restaurant container.

Fat supplies 50% of the energy, carbohydrate 43% and protein 7%. The rice and vegetables carry very little fat of their own, so that share is the oil: the onions are fried in it and the vegetables and masala are cooked in it before the rice is layered. This is the reverse of the pulaos in the same recipe set, where rice leads and oil follows. It also explains why this plate, with less rice than a plate of vegetable pulao, still comes out higher: 527 kcal against 496 kcal.

04What moves it

What changes the number

  • 01

Oil for the onions and masala

Two tablespoons of oil per plate is the single biggest item. A teaspoon of oil is about 44 kcal, so every spoon taken out of the pan shows up directly in the total. Going the other way, a teaspoon of ghee drizzled over the layers makes the plate 572 kcal and two make it 617 kcal.

  • 02

How much rice counts as a plate

This plate is built on 50 g of raw rice. A helping twice that size has twice everything: 1,054 kcal for two of these plates. Restaurant portions are sized for appetite and sharing, not to this recipe.

  • 03

Paneer, soya, nuts and fried potato

The recipe uses only plain vegetables. Paneer, soya chunks, cashews, raisins and potatoes that are deep-fried before layering are common additions, and each adds energy the figure does not include. Paneer and soya also add protein, which this plate is short of.

  • 04

Raita and salan on the side

Biryani seldom arrives alone. A bowl of raita adds some protein for a small number of calories, while an oily salan or gravy adds fat on top of an already fat-heavy plate.

06On the plate

In a meal and in a day

One plate is about 25% of a sedentary man's daily energy requirement and 32% of a woman's, so it is a full meal by energy. By make-up it is lopsided: 28.7 g of fat and only 9.5 g of protein. The 10 g of fibre from the vegetables helps. The sensible partner is curd or raita, which adds protein without much fat; a second plate takes the total to 1,054 kcal and 57.4 g of fat. On a day that includes biryani, lighter cooking at the other meals balances the oil.

Ways to keep it lighter

  • Halve the oil to 1 tablespoon a plate and brown the onions slowly in it instead of deep-frying them.
  • Add more cauliflower, beans and carrot to the same amount of rice so the plate is larger without more fat.
  • Eat it with plain raita in place of salan or a second helping.
  • Stir in paneer or soya chunks for protein if the biryani is the whole meal.
  • Serve half a plate, about 264 kcal, when it follows starters.
07Worth knowing

Before you rely on the number

The surprise here is that a vegetable biryani can outweigh a meat one. In this recipe set the mutton biryani is 396 kcal a plate and this one 527 kcal, simply because this recipe uses more oil. Vegetables do not make a biryani light; the fat it is cooked in decides that. Biryani is a well-salted dish too. Anyone on a diet set by a doctor or dietitian for a heart condition or blood pressure should go by that plan.

Food composition is general information, not a diet plan. Anyone managing a medical condition should plan their diet with a doctor or a registered dietitian.

08Questions

Vegetable Biryani: common questions

How much protein is in veg biryani?

About 9.5 g in one plate, only 7% of its energy. Rice and vegetables are not strong protein sources. Raita on the side, or paneer or soya chunks in the biryani, is the usual way to raise it.

How many calories are in 100 g of veg biryani?

The source reports a plate, not a 100 g weight: 527 kcal for a plate made from 50 g of raw rice, vegetables and 2 tablespoons of oil. Cooked weight changes with how much water the rice and vegetables hold, so a per-100 g number is not available from this recipe. Half a plate is 264 kcal.

How many calories are in 2 plates of vegetable biryani?

About 1,054 kcal, with 19 g of protein, 112 g of carbohydrate and 57.4 g of fat. Two plates of this recipe use the whole batch: 100 g of raw rice and 4 tablespoons of oil.

Is veg biryani good for weight loss?

Not as this recipe makes it. Fat supplies half of its 527 kcal, and it has little protein to keep hunger away. Made with less oil and more vegetables, and eaten with raita, it becomes a reasonable meal. How weight moves is a matter of the full day's intake, so one plate does not decide it either way.
