What this figure covers

Three ingredients carry all the calories in this recipe: 25 g of suji, 20 g of sugar and 20 g of ghee, cooked with water into one bowl. The suji swells as it absorbs the water, so 25 g of dry semolina becomes a modest katori of halwa. It is small in volume and dense in energy. Only kesari bath, at 432 kcal, comes out heavier among the 20 sweets in this set, which puts suji halwa 19th from the lightest. Halwa made with milk in place of water, or with cashews and raisins, goes higher still.

Fat supplies 53% of the energy, carbohydrate 43% and protein only 4%. Almost every gram of that fat is ghee: the bowl has 21.4 g of fat, and 20 g of ghee went into it. The carbohydrate is split between the semolina and the sugar.     The ghee to suji ratio

    This recipe uses 20 g of ghee for 25 g of suji, close to equal weights. Each teaspoon of ghee is about 5 g and 45 kcal, so a cook who roasts the suji in less ghee saves more than any other change can. One extra teaspoon takes the bowl to about 405 kcal.

    Sugar by weight, not by taste

    There is 20 g of sugar in the bowl, and its sugars are counted at 22.3 g in all. Many family recipes use more sugar than suji and give a sweeter halwa than this. Each additional teaspoon of sugar is about 16 kcal.

    Water or milk

    The reference halwa is cooked in water. Using milk adds protein and calcium along with fat and milk sugar, and the bowl gets heavier. Sheera made for a puja with milk and banana is a different dish from the one counted here.

    Nuts and raisins

    Cashews fried in ghee and a few raisins are common, and neither is in this recipe. They add fat and sugar on top of the 360 kcal, in small amounts that are easy to overlook.

  • Serve a few spoonfuls beside the meal instead of a full bowl.
