The longer rabri cooks, the more milk each spoonful represents. This recipe puts 203 ml of milk into a portion; a very thick rabri in the same katori may hold a good deal more.

Full-cream, buffalo or toned milk
Rabri depends on malai, so it is usually made with full-cream or buffalo milk. Most of the 11.8 g of fat in a portion comes from that milk, and toned milk lowers it at some cost to texture.
