These figures are from the Indian Nutrient Databank (INDB), which calculates each dish from a standard recipe using Indian food composition data. They describe that recipe and that serving: a larger portion, or more oil, ghee or sugar, gives more. Source: Vijayakumar A, Dubasi HB, Awasthi A, Jaacks LM. 02The number

What this figure covers

The reference recipe roasts 5 g of makhana in half a teaspoon of ghee and simmers it in 250 ml of milk with 1.5 tablespoons of sugar, and the whole pot is one bowl. Five grams of makhana is a small handful of puffed seeds, light enough that it barely registers in the total. A home cook who likes the kheer crowded with makhana, or who crushes extra into the milk to thicken it, will have a different bowl. Among the 20 sweets compared here it sits 14th from the lightest, with rice kheer right beside it at 301 kcal.

Carbohydrate supplies 47% of the energy, fat 41% and protein 12%. The fat is milk fat plus the ghee used for roasting; the carbohydrate is chiefly sugar; the protein, 9.2 g, is the milk's. Makhana contributes crunch and very little else at this quantity, which is why the bowl has only 0.3 g of fibre. Anyone choosing this kheer because makhana sounds light should know that the numbers are those of sweetened milk.

03The recipe behind it

What goes into one serving

The recipe INDB analysed makes 1 bowl. These are its main ingredients; spices, salt and water are left out.

04What moves it

What changes the number

  • 01

    Ghee for roasting the makhana

The recipe allows half a teaspoon. Makhana soaks up whatever fat is in the pan, so roasting in a generous spoonful changes the bowl quickly: one extra teaspoon of ghee brings it to about 345 kcal and two to about 390 kcal.

  • 02

Which milk goes in the pot

With 250 ml of milk in every bowl, the milk's fat content matters more than anything else. The 13.9 g of fat is almost entirely from milk and ghee, and toned milk lowers it without touching the makhana.

  • 03

    Sugar or jaggery

The 1.5 tablespoons of sugar can be cut more easily here than in most sweets, because roasted makhana has a nutty taste of its own. Each teaspoon added back is about 16 kcal. Jaggery changes the flavour but brings much the same calories as sugar.

  • 04

    More makhana, thicker kheer

A larger handful of makhana adds little energy next to the milk. A kheer simmered until thick is another matter: it packs more milk into each bowl, and that is where the calories rise.

06On the plate

In a meal and in a day

On a fasting day this kheer is often one of the few substantial things eaten, and in that role its 9.2 g of protein is useful. One bowl is about 14% of a sedentary man's daily energy requirement and 18% of a woman's; two bowls reach 600 kcal. It has almost no fibre, so fruit or a handful of plain roasted makhana alongside makes the meal more filling than a second bowl does. After a normal dinner, half a bowl at about 150 kcal is a fair dessert.

Ways to keep it lighter

  • Dry-roast the makhana in a heavy pan and leave the ghee out.
  • Cook it in toned milk and simmer longer for thickness instead of adding cream or khoya.
  • Cut the sugar to one tablespoon and let cardamom and a few strands of saffron carry the flavour.
  • Stir in extra roasted makhana at the end so a smaller bowl still feels like a full serving.
07Worth knowing

Before you rely on the number

Makhana has a reputation as a light food, but in this kheer it is 5 g in a bowl that carries 32.1 g of sugars and 13.9 g of fat. The sugars figure includes what milk contains naturally along with the 1.5 tablespoons added, and the fat is milk fat with a little ghee. During a fast, people with diabetes or anyone on medicines timed around meals should ask their doctor or dietitian how a sweet like this fits, since fasting changes the usual pattern of eating.

Food composition is general information, not a diet plan. Anyone managing a medical condition should plan their diet with a doctor or a registered dietitian.

08Questions

Makhana Kheer: common questions

How many calories are in 2 bowls of makhana kheer?

About 600 kcal for two bowls of the reference recipe, with 18.4 g of protein, 71.6 g of carbohydrate and 27.8 g of fat. Three bowls come to about 900 kcal, which is a large share of a day's food for most adults.

Is makhana kheer good for weight loss?

The makhana does not make it a light dish. A bowl has 300 kcal, 41% of it from fat, and very little fibre to keep a person full. It can be part of a day that is otherwise moderate, ideally as half a bowl of about 150 kcal, but no single dish decides how weight moves.

Makhana kheer or rice kheer: which is lighter?

They are practically the same in this set: 300 kcal for makhana kheer and 301 kcal for rice kheer, each with 9.2 g of protein. Both are built on the same quantity of milk and sugar, so the choice between them is one of taste and not of calories.

How much protein does makhana kheer have?

A bowl has about 9.2 g, which comes from the 250 ml of milk and not from the makhana. Protein accounts for 12% of the energy. Kulfi and rabri, which are also milk and sugar, give 8.7 g and 7.7 g per serving.
