Sweet shops cut their own sizes, often thicker, and sell by weight, so a piece from a box may hold noticeably more khoya than the one measured here. Khoya made from buffalo or full-cream milk is richer in fat than khoya made from toned milk. Shop khoya varies from one dairy to the next, and so does the barfi made from it.
