What this figure covers

The figure belongs to one standard recipe: 250 ml of milk simmered with 10 g of raw rice and 1.5 tablespoons of sugar, all of it served as a single bowl. That makes it a milk dish with a little rice in it, closer to sweetened milk than to a rice pudding. Kheer at a wedding or from a sweet shop is usually cooked down much further, so the same bowl holds more milk solids, and it often carries cashews, raisins or a spoon of ghee that this recipe does not count. Among the 20 sweets in this set it stands 15th from the lightest, almost level with makhana kheer at 300 kcal.

Carbohydrate supplies 53% of the energy, fat 35% and protein 12%. The fat and nearly all the protein come from the milk. The carbohydrate is mostly sugar, not rice: 10 g of rice is a small spoonful, while the sugar figure for the bowl is 32.2 g once the milk's own sugar is counted along with what is stirred in. What changes the number

    The fat in the milk

    Nearly all of the 11.9 g of fat in the bowl is milk fat, because the recipe uses no ghee. Full-cream milk pushes the figure up and toned milk brings it down, without changing the sweetness or the amount of rice.

    How far the milk is reduced

    Kheer thickens as water boils off, so a bowl ladled from a long-simmered pot contains more milk than one from a quickly cooked pot. A thick kheer in the same bowl is a larger serving in everything but volume.

    The sugar spoon

    The recipe uses 1.5 tablespoons of sugar. Each extra teaspoon adds about 16 kcal, taking the bowl to about 317 kcal with one more and 333 kcal with two. Condensed milk in place of sugar adds both sugar and milk solids.

People managing diabetes should fit kheer into the plan their doctor or dietitian has given them and not judge it by the rice, which is the smallest part of the bowl.

Is rice kheer good for weight loss?

It is a sweet with real milk in it, not a low-calorie food. At 301 kcal a bowl, with 53% of the energy from carbohydrate that is mostly sugar, it fits best as a small portion on some days. What happens to weight is settled by total intake across the week, so a half bowl of about 150 kcal is easier to fit than a full one.
