Wheat (whole, suji and dalia): nutrition per 100 g
Per 100 g, whole wheat grain gives 322 kcal, 10.6 g protein, 11.2 g dietary fibre and 3.97 mg iron, according to IFCT 2017. It ranks 2nd of 14 cereals and millets for thiamine and vitamin E, nutrients held in the germ, which is why the whole grain and dalia keep more of them than finely milled products.
About wheat (whole, suji and dalia)
Wheat is India's second great staple, grown as a winter crop across Punjab, Haryana, Uttar Pradesh, Madhya Pradesh, Rajasthan, Bihar and Gujarat and harvested in spring, the season of Baisakhi. IFCT 2017 records it as gehun in Hindi and Urdu, gom in Bengali, ghaun in Gujarati, godhi in Kannada, godumai in Tamil, godhumalu in Telugu, kanaka in Punjabi and godhum in Sanskrit.
Most wheat is ground into atta, covered on its own page. This page is about the grain and its coarser forms. Dalia, broken wheat, becomes porridge, khichdi and Gujarati lapsi. Suji or rava becomes upma, sooji halwa, rava idli and rava dosa. Vermicelli, sevai or semiya, goes into seviyan kheer for Eid, semiya upma and payasam. In Kerala, whole wheat is cooked into gothambu payasam.
IFCT 2017 tests these forms. Per 100 g, bulgur has 342 kcal, 10.8 g protein and 3.86 mg iron; semolina has 334 kcal, 11.4 g protein and 2.98 mg iron; vermicelli has 333 kcal, 9.7 g protein and 2.02 mg iron. The more the grain is refined, the more iron it loses.

Whole wheat has 0.46 mg thiamine per 100 g, 2nd of 14 cereals and millets and 15th of 239 foods. 100 g covers about 26 per cent of a man's daily requirement.

Vitamin E, rare in grains
At 0.6 mg vitamin E per 100 g, whole wheat ranks 2nd in its group, behind only quinoa. Most of it sits in the wheat germ.

Whole wheat has 11.2 g dietary fibre and 10.6 g protein per 100 g. It covers about 20 per cent of a man's daily protein and ranks 6th for protein among the 14 grains.

Before you plan around it
Wheat in every form contains gluten, so dalia, suji and semiya are off the menu for people with coeliac disease. The fibre figures IFCT 2017 gives for semolina and vermicelli are close to the whole grain's, which is unusually high for products made from the inner part of the grain; treat those numbers with some caution. The iron trend is clear, though, falling from 3.97 mg in the whole grain to 2.02 mg in vermicelli. Sooji halwa and seviyan kheer carry generous ghee and sugar, so they are sweets, not breakfast cereals.

Is dalia healthier than suji?
Dalia keeps more of the whole grain. Per 100 g in IFCT 2017, bulgur has 3.86 mg iron against 2.98 mg for semolina, while protein is similar at 10.8 g and 11.4 g. Dalia also takes longer to digest because the pieces are coarser.
Is wheat gluten-free?
No. Wheat in every form, including atta, dalia, suji, maida and semiya, contains gluten. People with coeliac disease must avoid all of them and use rice, jowar, bajra, ragi or rajgira instead.
How much protein is in whole wheat?
IFCT 2017 lists 10.6 g protein per 100 g of whole wheat, 6th of 14 cereals and millets. For whole wheat, that works out to about 20 per cent of a man's daily protein and 23 per cent of a woman's. Pairing wheat with dal or curd balances its protein.
What is suji made from?
Suji, also called rava or semolina, is coarsely milled from the inner part of the wheat grain, usually from hard wheat. Bombay rava and the finer chiroti rava are both wheat semolina; idli rava, despite the name, is ground from rice. IFCT 2017 lists semolina at 334 kcal and 11.4 g protein per 100 g.
