Semiya Upma (Vermicelli Upma)

Semiya upma is roasted wheat vermicelli cooked with a South Indian tempering and vegetables. It takes about fifteen minutes and the only real technique is roasting the vermicelli until evenly golden before any liquid touches it, which is what keeps the strands separate rather than sticky.

Ingredients

  • 1.5 cups wheat vermicelli (semiya)
  • 1 onion, finely sliced
  • 1 carrot, finely diced
  • 1/4 cup green peas
  • 2 tablespoons oil or ghee
  • 1 teaspoon mustard seeds
  • 1 tablespoon chana dal and 1 teaspoon urad dal
  • 2 tablespoons cashews
  • 2 green chillies, slit
  • 10 curry leaves
  • 2 cups hot water
  • 1 tablespoon lemon juice
  • Salt to taste

Most commercial semiya is refined wheat, so this is a quickly digested carbohydrate breakfast with modest fibre and little protein. That is manageable rather than disqualifying: loading it with vegetables raises the fibre, and adding peanuts, cashews or a boiled egg alongside gives it the protein it lacks. Whole wheat and millet vermicelli are now widely available and are a straightforward improvement.

Method

    Dry roast the vermicelli in a pan on a medium flame, stirring constantly, for 4 to 5 minutes until evenly golden. Skip this and the strands will clump. Many packets are sold pre-roasted, in which case give it 2 minutes only.

    Heat the oil in the same pan, pop the mustard seeds, then fry the chana dal, urad dal and cashews until golden.

    Add the green chillies, curry leaves and onion and cook for 4 minutes until the onion softens.

    Add the carrot and peas and cook for 4 minutes more.

    Pour in the hot water with salt and bring to a rolling boil.

    Add the roasted vermicelli, stir once, then lower the flame and cover for 5 minutes without stirring again.

    Rest off the heat for 5 minutes, fluff with a fork and finish with lemon juice.

Why does vermicelli need roasting?

Because it is made from refined wheat and its surface starch turns adhesive the moment it meets hot water. Roasting dries the surface and sets a thin toasted layer that resists that, so the strands stay separate. The colour to aim for is an even light gold throughout, and it must be stirred constantly because vermicelli scorches unevenly. Many brands sell pre-roasted semiya, which still benefits from two minutes of refreshing in the pan.

What is the right water ratio?

Two cups of water to one and a half cups of vermicelli, which is less than it looks like it needs. Vermicelli absorbs water fast and then keeps absorbing as it rests, so a ratio that seems correct in the pan gives a wet, sticky result five minutes later. If it looks slightly dry when you turn the heat off, it will be right by the time you serve it.

Why should you not stir after adding the vermicelli?

Because stirring breaks the strands and rubs starch off their surfaces, which is precisely what makes upma gluey. One stir to distribute, then the lid on and no further interference. The steam does the work. This is the same principle as not stirring rice, and it is the step people most often get wrong out of anxiety that it is sticking.

Is semiya upma healthy?

It is convenient rather than nutritious in its standard form. Refined wheat vermicelli digests quickly, offers little fibre and almost no protein, so a plate on its own behaves much like white bread. Two changes fix most of that: use whole wheat or millet vermicelli, which are now sold in most supermarkets, and add a generous quantity of vegetables plus nuts or an egg. Done that way it becomes a reasonable everyday breakfast.

Why is it good for children?

Because the texture is soft, the flavour is mild and it accepts vegetables invisibly. Finely diced carrot, peas and beans disappear into the strands in a way they do not in rice or roti, which makes it a useful vehicle for children who reject visible vegetables. The cashews add fat and calories that growing children generally need. Keep the green chilli whole rather than chopped so it flavours without heat, and remove it before serving. What is the difference between semiya upma and rava upma?

The grain and the texture. Rava upma uses semolina, which swells into soft granules and gives a slightly porridge-like body. Semiya upma uses vermicelli strands that stay distinct, so it eats more like a noodle dish. Rava upma needs more careful stirring to avoid lumps; semiya needs no stirring at all. Both use the same tempering and vegetables.

Can it be reheated?

Better than most upmas, though not perfectly. Vermicelli firms up when cold and softens again when reheated with a sprinkle of water, so it survives the trip to school or office reasonably well. Reheat covered, in a pan or microwave, with a tablespoon of water sprinkled over. Do not stir it while hot, for the same reason you did not stir it during cooking.

Why is my semiya upma sticky?

The vermicelli was not roasted enough, or you stirred it after adding water. Roast it in a dry pan until evenly golden before anything wet touches it, then stir once when it goes into the boiling water and leave it covered without stirring again. Stirring rubs off surface starch and makes it gluey.

How much water do I need for semiya upma?

Two cups of water to one and a half cups of vermicelli. That is less than it appears to need, but vermicelli keeps absorbing water while it rests, so a mixture that looks slightly dry when you turn off the heat will be correct by the time you serve it.

Is semiya upma good for weight loss?

Only moderately. Standard vermicelli is refined wheat, so it digests quickly and offers little fibre or protein, which means it does not keep you full for long. Whole wheat or millet vermicelli, plenty of vegetables and a protein on the side make it a much better fit for a controlled intake.

Do I need to roast pre-roasted vermicelli?

Two minutes in a dry pan is still worth it. Packets sold as roasted vary considerably in how far they have been taken, and a short refresh evens it out and drives off any moisture picked up in storage. It costs nothing and removes the main cause of a sticky result.
