There are colleges here for plenty of subjects, but a proper nutrition and dietetics programme usually means Delhi, and Delhi means either the long drive down through Haridwar or a night train and a rented room.

Dehradun is the capital of Uttarakhand, sitting in the Doon valley between the Shivalik range and the higher Himalaya. Mussoorie is above it, Rishikesh and Haridwar are down the road, and the valley itself is known for its basmati and its litchi orchards. It has been a school and institution town for a long time, and the Forest Research Institute campus is one of the landmarks people picture when they think of the city. For learners in the hill districts beyond Dehradun, in Tehri, Pauri or Chamoli, the city itself is already the faraway place with the good colleges.

The tempering is jakhiya rather than mustard seed, and bhang seed chutney appears beside the meal. Fruit means malta, apricot and pahadi apple in season. Meat is eaten, though many households eat it rarely and the everyday plate is vegetarian.

That list is close to what a nutritionist would design if asked to build a diet from scratch. Finger millet is one of the better plant sources of calcium in an Indian kitchen, which matters for the older women you will see most often, and calcium-rich Indian foods is a useful thing to have to hand. The hill pulses carry protein and fibre that white rice cannot. Local greens are eaten in quantity. Here is the honest part. In the valley, mandua and jhangora have been giving way to refined wheat and polished rice for years, partly because they were seen as poor food.
