A revival worth taking seriously, and worth reading carefully
Millets have returned to Indian conversation after decades of decline, driven by government promotion, growing interest in traditional grains, and genuine concern about diet-related disease. Much of that revival is well founded. Millets are nutritionally solid, agriculturally sensible in a warming and water-stressed country, and were displaced by rice and wheat for reasons of policy and convenience rather than nutrition.
But a revival attracts marketing, and the claims have run well ahead of the evidence. Millets do not cure diabetes, do not by themselves cause weight loss, and are not a different category of food from other whole grains. They are good grains. That is a strong enough claim to make honestly.
What the individual millets actually offer
Ragi, finger millet. The nutritional standout. Exceptionally high in calcium — high enough to stand comparison with dairy, which makes it valuable for anyone not eating dairy, for growing children and for older adults. Also a decent source of iron and fibre. Traditionally central in Karnataka, Tamil Nadu and parts of the east.
Bajra, pearl millet. A good source of iron and magnesium, with more protein than most millets. Warming in effect, which is why it belongs to winter eating in Rajasthan, Gujarat and Haryana. Bajra roti with ghee and jaggery in cold weather is a well-constructed traditional meal.
Jowar, sorghum. Naturally gluten-free, high in fibre, and the most versatile of the group for anyone adapting from wheat. Jowar roti behaves closer to a chapati than the other millets do.
Foxtail, little, kodo, barnyard and proso millets. The smaller millets, collectively higher in fibre than rice and generally producing a gentler glucose response. Barnyard millet is notably high in fibre. These work well as rice substitutes in pulao, khichdi, upma and pongal.
Buckwheat and amaranth. Botanically not millets, but grouped with them in practice. Both are gluten-free and both are complete in a way most grains are not — amaranth in particular has an unusually good amino acid profile for a grain-like food. Traditionally eaten during fasting periods.
Compared with rice and wheat, honestly
Against polished white rice, millets generally win clearly: more fibre, more micronutrients, more protein, and usually a lower glycaemic response.
Against whole wheat, the comparison is closer than millet marketing suggests. Whole wheat atta is itself a decent whole grain. Millets add variety, are gluten-free, and individually beat wheat on particular nutrients — ragi on calcium, bajra on iron. But someone already eating coarse whole-wheat atta is not making a dramatic change by switching.
The real gain is for households eating mostly polished rice or refined flour. For them, millets represent a substantial improvement. For a household already on whole grains, they represent useful diversity rather than transformation.
Where the marketing overreaches
Worth naming plainly, because these claims are everywhere.
"Millets cure diabetes." No food cures diabetes. Millets can help with glucose management as part of a well-built diet, in the same way other whole grains can. Anyone with diabetes should be managing it with medical care, and dietary change can affect medication requirements, which is a doctor's decision.
"Millets cause weight loss." They are more filling per calorie than refined grains, which helps. They contain calories, and a millet dosa is still a dosa. Portion size does not stop mattering because the grain changed.
"Millets are a superfood." They are ordinary good food, which is a better thing to be.
"Millets have no carbohydrate." They are grains. They are largely carbohydrate.
The processing problem. This is the important one. A great deal of what is sold as millet products — millet biscuits, instant millet mixes, very finely milled millet flour — has been processed enough to lose much of what made the grain worth eating. A finely powdered millet flour made into a thin sweetened porridge does not behave like the whole grain, and the benefit largely reflects how coarse and intact the grain remains. Buy whole grains and coarse flour where you can.
The genuine practical issues
Millets are not effortless, and pretending otherwise is why many households try them once.
They handle differently. Millet flours lack gluten, so rotis crack and tear. They need hot water in the dough, patient kneading and a gentler hand. This is a learnable skill and the first few attempts are usually discouraging.
They need soaking. Whole millets should be soaked for several hours before cooking. This reduces phytates, improves mineral absorption and improves digestibility. Skipping it is the commonest cause of the complaint that millets are heavy.
They spoil faster. Millet flour has a shorter shelf life than wheat atta because of its fat content. Buy small quantities, or buy whole grain and mill as needed.
Introduce them gradually. A sudden large increase in fibre causes bloating and discomfort. Start with two or three meals a week.
Variety matters. Eating only one millet, in place of eating only rice, replaces one monotony with another. Rotate them.
Who benefits most
Households currently eating mostly polished rice or refined flour — the largest gain by a distance. People managing blood glucose, alongside medical care, as discussed in the glycaemic index of Indian foods. Anyone avoiding gluten, for whom jowar and ragi open up practical everyday options. People not eating dairy, for whom ragi is a serious calcium source, covered in calcium-rich Indian foods. And anyone whose diet has narrowed to two grains, which describes a great many urban Indian households.
A sensible way to start
Do not replace everything. Replace some things, well.
Begin with the preparations that are easiest to succeed at: millet khichdi, millet upma, millet pongal, ragi porridge, ragi worked into dosa batter. These forgive inexperience in a way roti does not.
Add millet roti once you have had a few wins elsewhere, and expect the first attempts to be poor. Soak whole millets. Rotate between two or three varieties. Keep the portion sizes you would use for any grain.
And judge the result on how you feel and, if relevant, what your readings say — not on what the packet claims. Millets are a genuinely good addition to Indian eating. They are not doing anything mystical, and they do not need to.
Why they disappeared, which is worth knowing
Millets did not fall out of Indian diets because anyone decided they were inferior. They fell out for reasons of policy and convenience that had nothing to do with nutrition, and understanding that changes how you read the current revival.
From the 1960s onward, national food policy concentrated on rice and wheat — the grains that responded best to the new high-yielding varieties, and the grains that could be procured, stored and distributed at scale through the public distribution system. Those grains became cheaper, more available and, over a generation, socially preferred. Millets became the grain of the poor, and households moved away from them as soon as they could afford to.
That history matters for two reasons. First, it means the nutritional decline that followed was a side effect of a food-security success rather than a mistake about nutrition — the policy solved the problem it was aimed at. Second, it means the cultural work of the current revival is genuinely difficult: you are asking households to return to a grain their parents deliberately left behind, which is a harder ask than any nutritional argument acknowledges.
This is also why the agricultural case is as strong as the nutritional one. Millets need substantially less water than rice, tolerate poor soil and heat, and mature quickly — which in a water-stressed, warming country is not a small consideration. A grain that is good for the person eating it and appropriate to the land growing it is a rare combination, and it is a better argument than any of the health claims being made on millets' behalf.
