Hardly anyone searching for nutrition courses in Visakhapatnam types the full name. Most people write Vizag, and a fair number still use Waltair, the older name that survives on the railway maps and in the way older residents describe parts of the city. If you have been searching one spelling and finding little, try the others, because they all describe the same place. Vizag is the largest city in Andhra Pradesh, a port on the Bay of Bengal, sitting in the one stretch of the east coast where the Eastern Ghats come right down to the sea.

That geography gives the city an unusual shape. There is a working harbour and heavy industry on one side, a long beach road with Kailasagiri rising behind it, the Simhachalam temple on its hill, and the Araku valley a few hours inland and a good deal cooler. It is a city of shift workers, port and shipping staff, defence families, and a growing professional population, and almost none of them keep the same hours as each other.

The relocation pull here points at Hyderabad. It is the city Telugu speaking families look to for specialist training, and it has held that role for a long time. Bengaluru and Chennai take some of the rest. So a learner in Vizag reaches the same conclusion learners reach in a dozen coastal cities, that studying a serious subject means packing a bag. That was a reasonable reading once. It is not one now, because a live online class puts you in the same session as everyone else in the country on the same evening, with no move and no hostel.

Rice is the centre of the plate and the quantity is high. A standard meal is built around it: pappu, which is dal cooked with a vegetable or a green, a chilli hot curry, a pachadi, a pickle, and perugu annam, curd rice, to finish and to cool everything down.

It is a daily accompaniment, and so are other pickles through the year. Gongura, the sour roselle leaf, appears as pachadi and cooked with meat, and it is genuinely local to this region rather than pan south Indian. Chilli is used far more heavily here than in Tamil Nadu or Kerala, and tamarind gives the sourness. Groundnut and sesame oils do most of the cooking.

Being a coastal city, prawns, crab and fish are everyday foods rather than treats, and chepala pulusu, the sour fish curry, is a household dish. Non-vegetarian eating is common and unremarkable. Breakfast brings idli, dosa, upma, and pesarattu, the dosa made from whole green gram, which is worth knowing about because it is one of the better breakfasts in Indian cuisine from a protein point of view and your client already knows how to make it. Ragi java, a thin finger millet drink, still turns up in some households, more in the older generation than the younger.

Name the strengths honestly. Pappu means dal every day. Pesarattu is whole pulse at breakfast. Fish and prawns provide protein several times a week. Greens come in through gongura and other leaf pachadis without anybody framing it as healthy eating. The thin places are the volume of white rice, the frying, and above all the salt, because the pickle and the papad and the packaged snack all point the same direction. Salt is a conversation worth having gently and without shaming, because these pickles are made with love and often by somebody's grandmother. Telugu, in nearly every case, and it is only fair to say plainly that NNWA does not teach in Telugu. Classes run in English and Hindi. In practice that troubles fewer learners here than you might expect, because English is standard in Vizag's professional, industrial and clinical workplaces, and Hindi has more of a foothold in a port and defence city than in most of the south.
