All three point at the same place. The Kerala kitchen, and what it means for your diet charts

If you are going to counsel clients in Kochi, you are working with one of the more distinctive food cultures in India, and a generic north Indian chart will be useless here within a day. The staple grain is rice, but not the rice most of India eats. Kerala matta rice is red, parboiled and coarse, with more bran left on it than polished white rice, and it holds a meal together in a way that surprises people from elsewhere. Coconut is not a garnish. It is grated into thoran, ground into curry bases, pressed into milk for stew, and its oil does most of the frying.

Fish is everyday food, not a treat. Sardines, mackerel, seer fish and pearl spot turn up through the week, cooked as a fry or in a red, sour curry made with kudampuli, the smoked gambooge that gives Kerala fish curry its particular tang. Breakfast is its own world: puttu with kadala curry, appam with stew, idiyappam, and boiled tapioca eaten with fish. Vegetables come in through thoran and avial without anybody calling it a health measure. Pulses appear as kadala and as parippu.

The thin places are equally honest. The quantity of rice at a main meal is high. Coconut oil is a saturated fat used generously, and coconut appears in the same meal in two or three forms. Tea is taken strong and sweet, often several times a day. Fried plantain chips and other snacks are excellent and are also fried. Payasam and jaggery sweets cluster around festivals rather than being daily, and it is only fair to say so. The useful work in a Kochi household is almost never about removing fish or coconut. It is about portion of rice, frequency of frying, and the sugar in the tea. Which language will your clients want?

Malayalam, almost always, and NNWA does not teach in Malayalam. That is a plain statement rather than a hidden one. Our classes are in English and Hindi. In Kochi, English is genuinely widely used, in workplaces, in written material and in clinical settings, so the teaching language itself is unlikely to trouble you.

Where Malayalam fits in

Hindi is the less obvious part of the value here. Kochi has a substantial working population that has come from other states, and Hindi is the shared language with a lot of them. A skill qualification is not a degree. It does not replace a BSc or an MSc, and it does not make you a Registered Dietitian. RD status in India needs a BSc or MSc in the subject plus registration with the Indian Dietetic Association.
