These figures are from the Indian Nutrient Databank (INDB), which calculates each dish from a standard recipe using Indian food composition data. They describe that recipe and that serving: a larger portion, or more oil, ghee or sugar, gives more. Source: Vijayakumar A, Dubasi HB, Awasthi A, Jaacks LM. 02The number

What this figure covers

The recipe behind the figure puts 150 g of spinach, 80 g of potato, 50 g of tomato and 25 g of onion into one bowl, cooked in 2 teaspoons of oil. Spinach collapses as it cooks, so that weight of leaves is less daunting than it sounds, but it is still a generous bowl of sabzi and more than a small katori on a thali may hold. The figure applies to that recipe and that serving. Aloo palak from a restaurant is typically pureed and finished with cream or butter, and none of that is counted here.

The energy is split almost evenly between fat at 46% and carbohydrate at 43%, with protein at 12%. The fat is the 2 teaspoons of oil. The carbohydrate is mostly the potato, with a little from the tomato and onion. The spinach, although it is the largest ingredient by weight, contributes very little energy; what it brings is much of the 6.8 g of fibre, along with iron and calcium. Compared with aloo methi at 276 kcal, this recipe is lighter mainly because it uses less oil.

04What moves it

What changes the number

  • 01

    Spinach to potato

With 150 g of spinach to 80 g of potato, the leaves dominate this recipe. Reverse the proportions and the bowl becomes a potato sabzi with some greens in it, with more starch and more energy for the same volume.

  • 02

    Oil, ghee and cream

The recipe's 2 teaspoons of oil are modest. A third teaspoon makes the bowl 236 kcal, a teaspoon of ghee on top makes it 237 kcal, and two teaspoons of ghee 282 kcal. Cream stirred through a pureed gravy adds more.

  • 03

    Chopped or pureed

Pureeing the spinach does not change the calories, but a smooth gravy is usually cooked with more fat and is easier to eat quickly. A chopped, home-style aloo palak tends to stay closer to the figure here.

  • 04

    Bowl size

Half the recipe's bowl is about 96 kcal. If the katori at home takes roughly that much aloo palak, that is the number to use, and three full bowls would be 576 kcal.

In a meal and in a day

A bowl of aloo palak is about 9% of a sedentary man's daily energy requirement and 12% of a woman's. Two bowls come to 384 kcal with 11 g of protein and 18.8 g of fat. With 5.5 g of protein, aloo palak does a little better than most potato sabzis, but it is still a vegetable dish and needs dal, curd or paneer next to it. The potato already supplies some of the meal's starch, which leaves room to go easier on the roti or rice.

Ways to keep it lighter

  • Keep the oil at the recipe's 2 teaspoons and leave out cream, butter or a ghee tadka at the end.
  • Use more spinach and less potato for a larger bowl with less starch.
  • Squeeze lemon over the aloo palak just before eating, for flavour without fat.
  • Boil the potato separately and fold it in, so the oil is needed only for the onion and tomato.
07Worth knowing

Before you rely on the number

Spinach has a name for iron and calcium, but it holds on to both: the body absorbs only part of the iron and calcium in leafy greens. Aloo palak is a useful dish, not a replacement for anything prescribed for low iron. Anyone advised by a doctor or dietitian to limit certain greens, for example because of kidney stones, should follow that advice.

Food composition is general information, not a diet plan. Anyone managing a medical condition should plan their diet with a doctor or a registered dietitian.

08Questions

Aloo Palak: common questions

How many calories are in 2 bowls of aloo palak?

About 384 kcal for two bowls of this recipe, with 11 g of protein, 39.6 g of carbohydrate and 18.8 g of fat. Three bowls come to 576 kcal. Those are large bowls, each cooked from 150 g of spinach and 80 g of potato, so two home katoris may well be less.

Is aloo palak good for weight loss?

It is a reasonable choice: 192 kcal for a big bowl, 6.8 g of fibre and more protein than most potato sabzis. Under half of its energy is oil in this recipe, a smaller share than in aloo gobi or aloo methi. Restaurant versions with cream are a different matter. Aloo palak cannot shift weight by itself; the day's total intake does that.

Aloo palak or palak paneer: which is lighter?

Aloo palak, by a small margin: 192 kcal a bowl against 230 kcal for palak paneer in the same set of recipes. The bigger difference is protein, 5.5 g against 11.9 g, because paneer replaces the potato. Aloo palak is the lighter dish; palak paneer does more for the protein of the meal.

How much protein is in aloo palak?

About 5.5 g in a bowl, 12% of its energy. Among the potato sabzis compared here that is behind only aloo matar (9.7 g) and dahi aloo (5.9 g), and ahead of aloo methi (4.6 g), aloo gobi (3.3 g) and sookhe aloo (1.7 g).
