Calories in Aloo ki Sabzi

This is the Indian Nutrient Databank's figure for a tomato and onion gravy made with 100 g of potato and 2 teaspoons of oil. Aloo cooked with more oil, or served in a bigger bowl, comes to more.

These figures are from the Indian Nutrient Databank (INDB), which calculates each dish from a standard recipe using Indian food composition data. They describe that recipe and that serving: a larger portion, or more oil, ghee or sugar, gives more. Source: Vijayakumar A, Dubasi HB, Awasthi A, Jaacks LM. What this figure covers
The figure is for a plain home-style potato curry: 100 g of potato, 50 g of tomato and 30 g of onion cooked in 2 teaspoons of oil, with water for the gravy, all served as one bowl. As a recipe it is restrained. The same sabzi ladled out at a puri stall or a wedding counter generally carries more oil floating on top, and a home katori may hold less potato than the full 100 g. So 181 kcal describes this recipe and this bowl, and the bowl in front of the reader may sit on either side of it.
Potato has a reputation as the fattening part of a meal, but the split here says otherwise. Carbohydrate, mostly potato starch, supplies 47% of the energy and fat supplies 46%, and that fat is simply the 2 teaspoons of oil. Protein is 7%. In other words, two small spoons of oil bring nearly as much energy as all the vegetables in the bowl. This is why aloo ki sabzi, at 181 kcal, is lighter than the oilier aloo methi at 276 kcal even though both start from the same amount of potato.
What goes into one serving
The recipe INDB analysed makes 1 bowl. These are its main ingredients; spices, salt and water are left out.
What changes the number
- 01
Oil floating on the gravy
The recipe uses 2 teaspoons. Each extra teaspoon is about 44 kcal, so a bowl with one more comes to 225 kcal. A layer of red oil on top of a halwai-style aloo sabzi is a sign that the bowl is well past the figure here.
- 02
How much potato per bowl
The figure assumes 100 g of potato in the bowl. A katori that is mostly gravy with a few pieces has less starch and less energy; a thick, mashed-down sabzi packs in more potato per spoonful.
- 03
What it is eaten with
On its own the sabzi is moderate. It is usually the partner of puri, kachori or paratha, which are fried or cooked in fat and bring far more energy than the potato does. None of that is in the 181 kcal.
- 04
Ghee tadka or butter
A teaspoon of ghee added to aloo ki sabzi at the end brings the bowl to 226 kcal and two teaspoons to 271 kcal, which is more than the potato itself contributes.

In a meal and in a day
A bowl of aloo ki sabzi is about 9% of a sedentary man's daily energy requirement and 11% of a woman's. Two bowls come to 362 kcal and 42 g of carbohydrate. Since the dish is starch plus oil with only 3.1 g of protein, it pairs poorly with more starch alone: aloo and puri, or aloo and rice, leaves the plate short of protein. A katori of dal or curd beside it, and a salad, makes a more rounded meal than a second helping.
Ways to keep it lighter
- Hold the oil at 2 teaspoons, and bloom the spices in it before adding the tomato so the flavour carries.
- Thicken the gravy by mashing a few potato pieces into it instead of adding cream or extra oil.
- Eat it with phulka or plain roti more often than with puri or kachori.
- Add peas or a handful of spinach to the same gravy for more fibre and a little protein.
Before you rely on the number
The caveat with aloo ki sabzi is that it is mostly quick-digesting starch: 21 g of carbohydrate with little protein to slow the meal down. People who monitor their blood sugar should count the potato together with the roti, puri or rice on the plate, and keep to the amounts their doctor or dietitian has advised.
Food composition is general information, not a diet plan. Anyone managing a medical condition should plan their diet with a doctor or a registered dietitian.
Aloo ki Sabzi: common questions
How many calories are in 2 bowls of aloo ki sabzi?
Two bowls of this recipe have about 362 kcal, with 6.2 g of protein, 42 g of carbohydrate and 18 g of fat. Three bowls are 543 kcal and half a bowl is about 90 kcal. The puri or roti eaten with it has to be added separately.
Is aloo ki sabzi good for weight loss?
Potato is not the problem it is made out to be: a bowl is 181 kcal, fifth lightest of the 22 sabzis here. What matters is the oil and the company it keeps. A measured amount of oil, and roti in place of puri, keep the meal moderate. No single bowl of aloo settles the matter either way; total intake over the day does.
Which potato sabzi has the fewest calories?
Sookhe aloo, at 109 kcal a bowl, followed by aloo ki sabzi at 181 kcal, aloo gobi at 187 kcal and aloo palak at 192 kcal. Dahi aloo is 227 kcal, aloo methi 276 kcal and aloo matar 280 kcal. The order follows the oil and the extra ingredients more than the potato.
How much protein is in aloo ki sabzi?
About 3.1 g in a bowl, which is 7% of its energy. Potato is not a protein food. Aloo matar, with peas, gives 9.7 g and dahi aloo, with curd, gives 5.9 g, so either is the better pick when the meal has no dal.
