These figures are from the Indian Nutrient Databank (INDB), which calculates each dish from a standard recipe using Indian food composition data. They describe that recipe and that serving: a larger portion, or more oil, ghee or sugar, gives more. Source: Vijayakumar A, Dubasi HB, Awasthi A, Jaacks LM. 02The number

What this figure covers

Most people expect a bigger number, and the recipe explains why this one is moderate. It uses 100 g of paneer, 100 g of tomato, 50 g of onion, 20 g of ginger, 1 tablespoon of butter, 2 teaspoons of cream and 1 1/2 teaspoons of sugar, and divides the result into 2 bowls. Each bowl therefore holds 50 g of paneer in a fairly small amount of gravy, with 1 1/2 teaspoons of butter and 1 teaspoon of cream. A katori at home may hold less; a restaurant paneer butter masala is made with far more butter and cream and served in a larger bowl, so 228 kcal does not describe it.

Fat supplies 54% of the energy, carbohydrate 27% and protein 19%. What is different from the other paneer dishes is the kind of fat: with paneer, butter and cream and no oil at all, nearly all of the 13.8 g of fat is dairy fat, which is largely saturated. The 11 g of protein comes from the paneer. The carbohydrate includes the tomato and onion and the 3/4 teaspoon of sugar that each bowl gets. At 228 kcal this recipe is the lightest of the five paneer dishes compared, just under palak paneer at 230 kcal and far below kadai paneer at 344 kcal.

04What moves it

What changes the number

  • 01

    Butter and cream

This recipe allows 1 1/2 teaspoons of butter and 1 teaspoon of cream per bowl. A makhani gravy made the restaurant way uses far more of both, plus cashew paste. Even one teaspoon of ghee added to the bowl lifts it to 273 kcal.

  • 02

    Paneer in each serving

Each bowl has 50 g of paneer. A serving with more cubes has more protein and more fat in step, and paneer that is fried before going into the gravy has taken up extra fat as well.

  • 03

    Sugar in the gravy

A little sugar balances the tomato: 3/4 teaspoon per bowl here. Sweeter restaurant gravies use more, and each added teaspoon is about 16 kcal, taking the bowl to 244 kcal.

  • 04

    Bowl size and gravy

The recipe's bowl is small, with 50 g of tomato and 25 g of onion as the base. A larger bowl with more gravy is a multiple of the figure: two of these bowls are 456 kcal.

06On the plate

In a meal and in a day

One bowl is about 11% of a sedentary man's daily energy requirement and 14% of a woman's, and two bowls are 456 kcal with 22 g of protein. The dish is low in fibre, 2.3 g a bowl, because there is little vegetable in it beyond the tomato and onion base. A salad, a green sabzi or a dal fills that gap better than more gravy. What usually makes the meal heavy is the butter naan or jeera rice ordered with it.

Ways to keep it lighter

  • Make it at home, where the butter and cream can be measured by the teaspoon.
  • Thicken the gravy with well-cooked tomato and onion instead of cashew paste.
  • Stir in milk in place of cream at the end.
  • Use paneer made from toned milk, and add it to the makhani gravy without frying.
  • Add peas or capsicum to the gravy for the fibre the dish lacks.
07Worth knowing

Before you rely on the number

What matters here is the kind of fat: this modest bowl has 13.8 g of fat, nearly all of it dairy, from paneer, butter and cream, and dairy fat is largely saturated. A restaurant portion, with its extra butter and cream, will carry a good deal more. People who have been told to limit saturated fat, or who are being treated for raised cholesterol or a heart condition, should ask their doctor or dietitian how often a dish like this fits their plan.

Food composition is general information, not a diet plan. Anyone managing a medical condition should plan their diet with a doctor or a registered dietitian.

08Questions

Paneer Butter Masala: common questions

How many calories are in 2 bowls of paneer butter masala?

Two bowls, which is the whole of this recipe and 100 g of paneer, have about 456 kcal with 22 g of protein, 30.4 g of carbohydrate and 27.6 g of fat. Three bowls are 684 kcal. Restaurant bowls are larger and richer than these.

Why is this figure lower than restaurant paneer butter masala?

Because the recipe is a home-style one with a small serving. Each bowl has 50 g of paneer, 1 1/2 teaspoons of butter and 1 teaspoon of cream. Restaurant kitchens use more butter, more cream, nut pastes and a bigger portion, none of which is counted in 228 kcal.

How much protein is in paneer butter masala?

About 11 g in a bowl, or 19% of its energy, from the 50 g of paneer. Palak paneer has 11.9 g, kadai paneer 13.8 g and matar paneer 18.3 g a bowl in the same comparison.

Is paneer butter masala good for weight loss?

A small home-made bowl at 228 kcal with 11 g of protein can fit into a moderate day. The restaurant dish with naan generally cannot do so comfortably, since it is far richer than this recipe. It is also low in fibre, so it is not very filling for its calories. What happens to weight depends on total intake, with paneer butter masala counted honestly within it.
