These figures are from the Indian Nutrient Databank (INDB), which calculates each dish from a standard recipe using Indian food composition data. They describe that recipe and that serving: a larger portion, or more oil, ghee or sugar, gives more. Source: Vijayakumar A, Dubasi HB, Awasthi A, Jaacks LM. 02The number

What this figure covers

The recipe behind the figure roasts 200 g of brinjal, mashes it and cooks it with 50 g of tomato and 50 g of onion in 1 tablespoon of oil, and counts the result as a single bowl. That is a large helping of bharta. In many homes the same quantity would be shared, so the katori that reaches the plate may hold a good deal less than this. The 212 kcal applies to this recipe at this serving size, not to a dhaba bharta swimming in oil or one enriched with peas or butter.

Roasting a brinjal over a flame adds no fat at all, and brinjal is one of the lightest vegetables in the kitchen. The energy arrives afterwards: fat supplies 64% of it, and that fat is the tablespoon of oil the onion, tomato and mashed brinjal are fried in. Carbohydrate supplies 28% and protein 9%. What the vegetables contribute most is fibre, 10.7 g in the bowl, which is among the highest figures in this group of sabzis and the reason bharta is filling for its calories.

What goes into one serving

The recipe INDB analysed makes 1 bowl. These are its main ingredients; spices, salt and water are left out.

04What moves it

What changes the number

  • 01

    Oil in the masala

The roasted flesh soaks up whatever fat it is cooked in. The recipe uses a tablespoon; one teaspoon more brings the bowl to 256 kcal. Mustard oil, sunflower oil and groundnut oil all count the same, at about 44 kcal a teaspoon.

  • 02

    Roasted or fried

Brinjal charred on a flame, in an oven or on coals takes on no fat. Some shortcuts fry chopped brinjal in oil until soft instead, and brinjal fried this way absorbs oil readily, so the same bowl comes out heavier.

  • 03

    Size of the helping

The figure is for a bowl made from 200 g of brinjal. Half of that is about 106 kcal, which is the better number if the bharta is one of two sabzis on the plate.

  • 04

    Peas, ghee and butter

Green peas are a common addition to bharta and bring a little starch and protein. A teaspoon of ghee to finish takes the bowl to 257 kcal and two teaspoons to 302 kcal.

In a meal and in a day

One bowl of baingan bharta is about 10% of a sedentary man's daily energy requirement and 13% of a woman's. Two bowls come to 424 kcal and 29.2 g of fat, but also 9 g of protein. Baingan bharta is traditionally eaten with roti, bajra rotla or paratha; with plain roti and a dal it makes a meal with plenty of fibre. On its own it is short of protein at 4.5 g a bowl, so the dal or a bowl of curd matters.

Ways to keep it lighter

  • Roast the brinjal on a flame or in the oven, and never fry it.
  • Cook the onion and tomato in 2 teaspoons of oil and let the smoky brinjal carry the flavour.
  • Stretch the bharta with green peas or extra tomato instead of extra oil.
  • Serve half a bowl of bharta alongside dal when the meal has other dishes.
07Worth knowing

Before you rely on the number

The 10.7 g of fibre in a bowl of baingan bharta is a large amount for one dish, so those not used to it may prefer a smaller helping at first. Bharta is also salted to taste, and that comes on top of the pickle, papad or salted buttermilk in the same meal. Anyone asked to restrict salt for blood pressure or a kidney condition should season the bharta lightly and follow the limits given by their doctor or dietitian.

Food composition is general information, not a diet plan. Anyone managing a medical condition should plan their diet with a doctor or a registered dietitian.

08Questions

Baingan Bharta: common questions

How many calories are in 2 bowls of baingan bharta?

For two bowls of this recipe the figure is about 424 kcal, with 9 g of protein, 28.6 g of carbohydrate and 29.2 g of fat. Three bowls are 636 kcal. Each bowl is made from 200 g of brinjal, so two of them is a great deal of bharta, and smaller home helpings will come to less.

Is baingan bharta good for weight loss?

It has much going for it: 10.7 g of fibre in a 212 kcal bowl, from a vegetable that is itself very light. The limit is the oil, which supplies 64% of the energy in this recipe. Made with less oil, bharta is one of the more filling low-energy sabzis. Its effect on weight still depends on the whole day's food and not on the bharta alone.

How much protein is in baingan bharta?

About 4.5 g in a bowl, or 9% of its energy. Brinjal is not a protein source. For comparison, matar mushroom gives 10.7 g and palak paneer 11.9 g a bowl, so bharta needs dal, curd or paneer elsewhere in the meal.

Does roasting the brinjal reduce the calories?

Roasting does not remove calories, but it avoids adding any, because the brinjal softens without oil. The fat in this recipe, 14.6 g a bowl, goes in afterwards with the onion and tomato. A bharta made by frying the brinjal in oil would be heavier than the 212 kcal given here.
