Fenugreek leaves (methi): nutrition per 100 g

Per 100 g, fresh methi leaves give 34 kcal, 3.7 g protein, 4.9 g fibre, 274 mg calcium and 5.69 mg iron, according to IFCT 2017. Their 9245 micrograms of beta-carotene ranks 3rd of 160 foods, and the iron ranks 5th of 26 green leafy vegetables. Few greens appear in as many Indian dishes, from aloo methi and thepla to the kasuri methi crumbled over butter chicken.

01The food

About fenugreek leaves (methi)

Methi is the young plant of fenugreek, the same crop whose yellow seeds go into tadkas and pickles. It is sown in autumn and sold from October to March in small bunches with pale roots attached, and in some cities as tiny microgreen-like samudri methi. Rajasthan, Gujarat, Madhya Pradesh and Punjab grow most of it. IFCT 2017 records names in 16 languages, including methi sag in Hindi and Marathi, menthya soppu in Kannada, vendhaiya keerai in Tamil, menthikoora in Telugu, uluva ila in Malayalam and kasori methi in Kashmiri.

Fresh methi has a sharp, bitter, almost maple-like smell that softens with cooking. It goes into aloo methi and methi malai matar in the north, methi thepla and muthia in Gujarat, methi na gota pakoda, and bajra methi puri in Rajasthan. Dried and crushed, it becomes kasuri methi, named after Kasur in Punjab, which is why IFCT's methi entry links to recipes as varied as dal makhani and paneer butter masala.

    Iron ranks 5th among greens

    Methi carries 5.69 mg iron per 100 g, 39th of 242 foods. A 100 g bunch of methi supplies 30 per cent of a man's iron need and 20 per cent of a woman's. Eating methi with tomato or lemon, rather than with tea, helps the body absorb more.

    Beta-carotene 3rd of 160 foods

    The 9245 micrograms of beta-carotene per 100 g puts methi just behind drumstick and agathi leaves. Cooking with a little oil, as in thepla or aloo methi, makes the carotene easier to absorb.

    Calcium and vitamin C

    100 g of fresh leaves gives 274 mg calcium, about 27 per cent of the adult requirement, and 58.2 mg vitamin C, 73 per cent of a man's need. Both figures are for raw leaves; long cooking lowers the vitamin C.

    Methi has 75 micrograms of folate per 100 g, 34 per cent of a woman's requirement, and 362 mg of the plant omega-3 fat ALA, ranking 24th of 203 foods.

How fenugreek leaves (methi) is eaten

  • Methi thepla in Gujarat: chopped leaves kneaded into wheat and besan dough with curd, turmeric and sesame, rolled thin and roasted.
  • Aloo methi: diced potatoes cooked with a big bunch of methi, garlic and dried red chilli until the leaves are dark and tender.
  • Methi muthia: leaves bound with coarse flour and spices, steamed as logs, sliced and tempered, or added to undhiyu.
  • Vendhaya keerai kootu in Tamil Nadu: leaves cooked with moong dal and a coconut and cumin paste.
  • Kasuri methi: dried leaves crushed between the palms over dal makhani, kadai paneer or butter chicken at the end.

Before you plan around it

Methi's bitterness is part of its character, but many cooks salt the chopped leaves, rest them for ten minutes and squeeze out the juice; this does tame bitterness but also washes away some vitamins, so do it briefly. Fenugreek is a legume, and people with peanut or chickpea allergy occasionally react to it. Fenugreek seeds, taken in large amounts, can lower blood sugar, so anyone on diabetes medicines who plans to use methi seeds or supplements regularly should tell their doctor; ordinary portions of the leaves as a vegetable are not a concern.

Is methi good for iron?

Yes, for a vegetable. Fresh methi has 5.69 mg iron per 100 g in IFCT 2017, 5th among 26 leafy vegetables. Plant iron is absorbed less well than iron from meat or fish, so pair methi with vitamin C, for example tomato in aloo methi or a squeeze of lemon on the thepla.

Is kasuri methi as nutritious as fresh methi?

Kasuri methi is dried fenugreek leaf, so most minerals and fibre are concentrated by weight, but some vitamin C and carotene are lost in drying. It is used by the pinch for flavour, so in practice fresh methi cooked as a vegetable contributes far more to a meal.

Why is methi bitter?

Fenugreek contains natural bitter compounds, including saponins and alkaloids, that are strongest in mature leaves. Choose young, small-leaved bunches, cook them with potato, peas, cream or jaggery, or briefly salt and squeeze the leaves before cooking to soften the bitterness.

Is methi good for diabetes?

Methi leaves bring 4.9 g fibre per 100 g and very little carbohydrate, 2.2 g, so they suit a diabetes-friendly plate. Research on blood sugar has mostly used fenugreek seeds in large doses. Anyone on diabetes medicines should talk to their doctor before using fenugreek therapeutically.
