Methi Thepla

Methi thepla is a thin Gujarati flatbread made from wholewheat flour, gram flour and chopped fenugreek leaves, bound with curd and oil. The curd and oil are what keep it soft for several days without refrigeration, which is why thepla is the standard Gujarati travel food.

Ingredients

  • 1.5 cups wholewheat flour
  • 1/4 cup gram flour (besan)
  • 1 cup fresh fenugreek leaves, chopped fine
  • 1/4 cup thick curd
  • 2 tablespoons oil, plus more for cooking
  • 1 teaspoon ginger green chilli paste
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chilli powder
  • 1/2 teaspoon carom seeds
  • 1 teaspoon sesame seeds
  • Salt to taste

Fenugreek leaves are one of the more nutritionally dense greens in Indian cooking, supplying iron, calcium, folate and a distinctive group of compounds studied for their effect on blood glucose. Fenugreek seeds have the stronger evidence for lowering post-meal glucose, but the leaves contribute soluble fibre in the same direction. Combined with wholewheat and gram flour, thepla is a considerably better bread for blood sugar than plain refined flour roti.

Method

    Wash the fenugreek leaves well, drain thoroughly and chop finely. Sprinkle a little salt over them and set aside for 10 minutes, then squeeze out the water.

    Combine both flours with the squeezed fenugreek, curd, oil, ginger chilli paste, turmeric, chilli powder, carom seeds, sesame seeds and salt.

    Knead into a firm, smooth dough using very little extra water. The curd and the moisture in the leaves will do most of the work.

    Rest the dough for 20 minutes covered.

    Roll each ball as thin as you can manage, considerably thinner than a roti. Thepla should be almost translucent at the edges.

    Cook on a medium-hot tawa for about 40 seconds a side, then brush with oil and press gently until both sides show brown spots.

    Stack in a cloth-lined container as they come off the pan.

Why does thepla keep for days when roti does not?

Fat and acid. The oil worked into the dough coats the starch and slows the staling process, in which starch molecules recrystallise and squeeze out water. The curd contributes acidity that inhibits microbial growth. Together they let thepla sit at room temperature for three or four days in a dry climate, which is exactly why Gujarati families have carried it on journeys for generations. A plain roti made without either is stale within hours.

Should the fenugreek be salted and squeezed first?

Yes, if you want a dough that behaves. Fresh methi leaves hold a great deal of water, and if it all goes into the dough you will need far more flour to compensate, which dilutes the flavour. Ten minutes with a little salt draws the water out through osmosis, and squeezing removes it. This also takes the edge off the bitterness, which some people find strong.

Why gram flour as well as wheat?

For flavour and for structure. Gram flour brings a nutty depth that plain wheat lacks, and its protein helps the very thin dough hold together without becoming tough. It also raises the protein content of the bread. A quarter cup to one and a half cups of wheat is the usual ratio; more than that and the thepla becomes fragile and prone to cracking at the edges.

How thin should thepla be rolled?

Much thinner than a roti, thin enough that you can almost see through the edges. This is the single most common difference between a good thepla and a mediocre one. Thickness makes it doughy and shortens its keeping time, because a thicker bread holds more moisture and goes soft rather than staying pliable. If the dough tears while rolling this thin, it needs a few more minutes of kneading.

Is fenugreek good for blood sugar?

There is a reasonable body of evidence, though most of it concerns the seeds rather than the leaves. Fenugreek seeds are high in a soluble fibre called galactomannan, which slows carbohydrate absorption, and trials have shown modest reductions in post-meal glucose. The leaves contribute fibre and micronutrients in the same direction but have been studied far less. Eating thepla is a sensible choice for anyone managing blood sugar, particularly against a refined flour bread, but it is not a treatment.

What if fresh methi is not available?

Kasuri methi, the dried leaves, works but changes the bread. Use about three tablespoons in place of a cup of fresh, crushed between the palms before adding, and increase the curd slightly to compensate for the lost moisture. The flavour is more concentrated and less green, and the texture is smoother because there is no leaf to interrupt it. Frozen chopped methi is the closer substitute if you can find it.

What is thepla eaten with?

Curd, pickle and a dry vegetable, or nothing at all. In Gujarat it is commonly eaten with chundo, a sweet mango pickle, and that sweet-sour contrast against the bitter fenugreek is the point. On journeys it is eaten plain. It also works well with a bowl of gujarati kadhi, which is the standard lunch pairing at home rather than on the road.

What people ask about Methi Thepla

How long does thepla stay fresh?

Three to four days at room temperature in a dry climate, and about a week refrigerated. The oil and curd in the dough are what preserve it: the fat slows staling and the acidity inhibits spoilage. Store them stacked in a cloth-lined airtight container rather than in foil, which traps moisture and makes them soggy.

Why is my thepla hard?

Usually too little fat, too little kneading, or rolled too thick. Thepla needs a good two tablespoons of oil in the dough and enough kneading to develop a smooth, pliable texture. It should also be rolled much thinner than a roti, thin enough to be almost translucent at the edges.

Can I make thepla with kasuri methi?

Yes. Use about three tablespoons of dried leaves in place of a cup of fresh, crushing them between your palms first, and add a little extra curd to make up the moisture. The flavour is more concentrated and less green, and the texture is smoother since there is no leaf to break it up.
