Bhel Puri

Bhel puri is puffed rice tossed with sev, crushed puris, chopped onion, tomato and potato, and three chutneys: sweet tamarind, green coriander and a thin garlic one. It must be mixed at the very last moment, because the chutneys begin softening the puffed rice within about a minute.

Ingredients

  • 4 cups puffed rice (murmura)
  • 1/2 cup fine sev
  • 10 puris, crushed
  • 1 onion and 1 tomato, finely chopped
  • 1 boiled potato, diced small
  • 3 tablespoons sweet tamarind chutney
  • 2 tablespoons green coriander chutney
  • 1 teaspoon chaat masala
  • 3 tablespoons chopped coriander leaves
  • Juice of half a lemon
  • Salt to taste

Among chaats, this is the one worth choosing. Puffed rice is very light, nothing in the base is deep fried apart from the sev and puris, and the raw onion, tomato and coriander contribute genuine vegetable content. The tamarind chutney carries sugar and the sev carries oil, so it is not free, but a bowl of bhel is a fraction of the energy of a plate of samosas or a vada pav.

Method

    Dry roast the puffed rice in a pan for 3 minutes on a low flame to drive off any moisture it has picked up, then cool it. Limp murmura ruins bhel more than anything else.

    Have every component chopped and ready in separate bowls before you begin. Bhel cannot be assembled slowly.

    In a large bowl, combine the puffed rice, onion, tomato, potato and half the crushed puris.

    Add both chutneys, the chaat masala and salt, and toss quickly with your hands or two spoons for no more than 20 seconds.

    Add the lemon juice and coriander leaves and toss once more.

    Top with the sev and the remaining crushed puris.

    Serve immediately, in bowls, with a small paper cone or spoon. It is at its best within a minute.

Why must bhel be mixed at the last second?

Because puffed rice is extremely porous and the chutneys are water based. Within about sixty seconds the murmura begins absorbing that moisture and goes from crisp to leathery, and there is no way to reverse it. This is why street vendors mix each portion to order in front of you rather than preparing a batch. At home it means every component must be chopped and ready before anything is combined.

Should the puffed rice be roasted first?

Yes, if it has been open for more than a day. Puffed rice is hygroscopic and picks up humidity from the air readily, and slightly soft murmura makes a disappointing bhel even before the chutney goes in. Three minutes in a dry pan on a low flame, then cooled completely, restores the crispness. In a humid climate this is worth doing every time.

Which chutneys are essential?

Sweet tamarind and green coriander are the two that matter, and they are doing different jobs: the tamarind chutney brings sweetness and sourness, the green chutney brings heat and freshness. A thin garlic chutney is the third in Mumbai versions and adds pungency. Using only one of them gives a flat bhel; the interplay is the point. Both keep for a week refrigerated, so making them ahead is sensible.

What is the difference between bhel puri and jhal muri?

Region and treatment. Bhel puri, from Mumbai, uses chutneys and is sweet, sour and moist. Jhal muri, from Kolkata and Bengal, uses no chutney at all, relying instead on mustard oil, chopped green chilli, roasted peanuts and a spice mix, and it stays completely dry. Jhal means spicy. They start from the same puffed rice and end up as quite different snacks.

Is bhel puri healthy?

It is the sensible choice on a chaat menu. Puffed rice is very light, the base is not fried, and the raw onion, tomato and coriander are real vegetables. What carries the energy is the sev, which is fried gram flour, the crushed puris, and the sugar in the tamarind chutney. Asking for less sev and less sweet chutney makes a genuine difference. Compared with a samosa or a vada pav, a bowl of bhel is a much smaller investment.

Can it be made more filling?

Yes, and the traditional additions do it well. Boiled white peas, sprouted moong or roasted chana added to the base bring protein and fibre and turn a snack into something closer to a light meal. Roasted peanuts do the same and add fat. These are all standard in one regional version or another rather than modern health additions, so they do not make it taste wrong.

What is sukha bhel?

The dry version, made without chutneys, using only chaat masala, lemon juice, chopped onion and coriander. It stays crisp much longer, which makes it the practical choice if you are serving several people or want to eat it slowly. Many Mumbai vendors offer both and will ask which you want. It is also considerably lower in sugar, since the tamarind chutney is where most of it comes from.

Why does my bhel puri go soggy?

The chutneys are water based and puffed rice absorbs moisture within about a minute. Mix it only at the moment of serving, with everything chopped and ready beforehand, and eat it straight away. If the murmura was already soft, dry roast it for three minutes and cool it before you start.

Is bhel puri healthy?

It is the best option on most chaat menus. The base is puffed rice rather than anything fried, and the onion, tomato and coriander are genuine vegetables. The sev, crushed puris and the sugar in the tamarind chutney are where the energy is, so asking for less of each makes a real difference.
