Okra (bhindi): nutrition per 100 g
Per 100 g, raw okra gives 27 kcal, 2.1 g protein, 3.6 g carbohydrate and 4.1 g fibre, according to IFCT 2017. It ranks 2nd of 39 vegetables for calcium, at 86 mg, 3rd for folate, at 64 micrograms, and 4th for magnesium, at 66 mg. Bhindi is one of India's most loved vegetables, and its slippery texture comes from a soluble fibre that is worth keeping.
About okra (bhindi)
Okra, or ladies finger, is a summer and monsoon vegetable grown in every state, and India is the world's largest producer. IFCT 2017 records names in 17 languages: bhindi in Hindi and Punjabi, bhinda in Gujarati, bhendi in Marathi, Odia and Assamese, dherosh in Bengali, bende in Kannada, vendakkai in Malayalam, vendaikkai in Tamil, bendakaya in Telugu, ramtoriya in Nepali and belandri in Manipuri.
Every region cooks it its own way. North India makes bhindi masala, bharwan bhindi stuffed with spiced besan or amchur, bhindi do pyaza and crisp kurkuri bhindi. Sindhi and Gujarati kitchens add it to kadhi. Tamil Nadu makes vendakkai poriyal and puli kuzhambu, Andhra bendakaya vepudu and pulusu, Kerala vendakka mezhukkupuratti, and Bengal fries it as dherosh bhaja.

Before you plan around it
To keep okra from turning slimy, wash it whole and dry it completely before cutting, cook it in an open pan without a lid, and add sour ingredients such as amchur, tomato or tamarind towards the end. The slime itself is soluble fibre and is not harmful. Kurkuri bhindi and fried bhindi are tasty but soak up a lot of oil, so enjoy them as a side rather than the main dish. Choose tender pods that snap cleanly at the tip; tough ones are fibrous.

Why is okra slimy?
Okra contains mucilage, a gel-forming soluble fibre that is released when the pods are cut and heated in liquid. Drying the pods well, cutting them into larger pieces, cooking them uncovered and adding something sour reduces the stickiness.
