Bhindi Masala
Bhindi masala is a dry North Indian dish of okra sauteed with onion, tomato and ground spices. The whole technique is about managing mucilage, the natural gel in okra that turns slimy when it meets water: the pods must be bone dry, cut dry, and cooked on a high flame without a lid.

Ingredients
- 500 g okra, washed and dried thoroughly several hours ahead
- 2 onions, sliced thin
- 2 tomatoes, chopped
- 2 tablespoons oil
- 1 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1/2 teaspoon red chilli powder
- 1/2 teaspoon amchur (dry mango powder)
- 1/2 teaspoon garam masala
- Salt to taste

Okra is unusually useful for blood sugar management. It is low in carbohydrate at around 7 grams per 100 grams, and its soluble fibre, the same mucilage that causes the cooking difficulty, slows glucose absorption in the small intestine. It also supplies folate, vitamin K and vitamin C. Cooked dry with two tablespoons of oil, it is one of the better everyday vegetables for anyone managing diabetes.
Method

Wash the okra several hours ahead and spread it on a cloth to dry completely. Any surface water will make the finished dish slimy, and this step cannot be rushed.

Trim the tops and cut into 2 cm pieces with a dry knife on a dry board.

Heat the oil in a wide pan on a high flame, add the cumin, then the okra. Saute uncovered for 8 to 10 minutes without stirring too often.

Once the pieces have stopped looking sticky and have browned at the edges, lift them out and set aside.

In the same pan, fry the sliced onion for 5 minutes until golden, then add the tomatoes, turmeric, coriander powder, chilli powder and salt.

Cook for 5 minutes until the tomato softens but has not turned to a paste.

Return the okra, add the amchur and garam masala, toss for 2 minutes and serve immediately.

Why does okra turn slimy, and how do you prevent it?
Okra contains mucilage, a soluble fibre that forms a gel the moment it is exposed to water and heat. Three rules control it. The pods must be completely dry before cutting, which means washing them hours ahead rather than minutes. The pan must be hot and uncovered, so any moisture that is released evaporates instead of condensing back. And you must resist stirring constantly, because agitation breaks the cut surfaces open and releases more gel. Follow all three and the slime never appears.
Should you add acid to control the slime?
Acid helps, but late rather than early. Amchur, lemon juice or tomato all cut through mucilage, which is why almost every regional version of this dish includes one. The mistake is adding them at the start, when they contribute their own liquid to a pan that is trying to stay dry. Cook the okra dry first, then let the tomato and amchur do their work in the last few minutes.
How do you choose good okra?
Pick pods that snap rather than bend. Take one and bend the tip: if it breaks cleanly, the okra is young and tender. If it flexes, it is mature, fibrous and will stay tough however long you cook it. Size is a rough guide, with pods under about ten centimetres usually being the better ones, but the snap test is more reliable than length. Avoid anything with dark patches or a dried, woody stem.
Is bhindi good for diabetes?
It is one of the better vegetables for it, and for a mechanism that makes sense rather than folklore. Okra is low in carbohydrate and high in soluble fibre, and soluble fibre slows the rate at which glucose crosses from the gut into the blood, which blunts the post-meal rise. There is also research interest in okra compounds and insulin sensitivity, though that evidence is early and mostly not from human trials. Can you cook bhindi masala without frying it separately?
You can, but the two-stage method exists for a reason. Cooking the okra alone on a high flame drives off its moisture and sets the surface before it ever meets the wet onion and tomato base. Throwing everything in together means the okra sits in liquid from the first minute, which is precisely the condition that produces gel. If you are short of time, at least give the okra five minutes alone before anything else goes in.
What about stuffed bhindi, and how does it differ?
Bharwa bhindi uses whole pods slit lengthways and filled with a dry spice mixture, usually built on coriander powder, amchur and gram flour, then cooked slowly and gently. It is a different dish with a different texture: softer, more intensely spiced, and eaten more as a side than a main. The anti-slime rules still apply, but because the pods stay whole there are fewer cut surfaces and the problem is smaller.
What should it be served with?
Roti and dal, in that order of importance. Bhindi masala is dry and well spiced, so it wants a bread to carry it and something wet alongside. Rice is a poor partner because there is no gravy. A simple dal tadka with rotis and this makes a complete and genuinely balanced vegetarian meal, with the dal supplying the protein the okra does not.

How do you stop bhindi from becoming slimy?
