Spring onion: nutrition per 100 g
Per 100 g, spring onion greens give 26 kcal, 2.1 g protein, 5.2 g fibre, 3.09 mg iron and 27.2 mg vitamin C, according to IFCT 2017. Their 700 micrograms of beta-carotene ranks 2nd of 31 vegetables with a value, and both iron and magnesium rank 3rd of 39. Used by the handful rather than the spoonful, hara pyaz is a real vegetable, not just a garnish.
About spring onion
Spring onions are young onion plants pulled before the bulb swells, sold in bunches with white bases and long, hollow green leaves. IFCT's entry is for the green stalk. They are a winter crop on the plains and are available most of the year from the hills. IFCT 2017 records names in 16 languages: hare pyaaz in Punjabi, hari pyaaz in Urdu, piyaz kali in Bengali, piyaj paat in Assamese, pati in Marathi, erulli soppu in Kannada, vengaya thaal in Tamil, ulli kadalu in Telugu and chhayapi ko saag in Nepali.
Indian cooks use them in two ways. As a vegetable, they go into Maharashtra's kanda paat bhaji and pithla, Gujarat's lili dungri nu shaak with besan, Punjab's hare pyaz aloo and Bengal's peyajkolir torkari, made from the flowering stalks. As a finishing herb, they top Indo-Chinese fried rice, noodles, manchurian and momos, and Nepali and Sikkimese cooks pound them into chutneys.

Spring onion greens carry 700 micrograms of beta-carotene per 100 g, ranking 2nd of 31 vegetables and 34th of 160 foods. The darker green tops hold the most.

Iron and magnesium rank 3rd
Each 100 g supplies 3.09 mg iron and 67 mg magnesium, both 3rd among vegetables. Cooked as a sabzi, 100 g of greens gives a man 16 per cent of his iron need and a woman 11 per cent.

Hara pyaz has 5.2 g fibre and 58 micrograms of folate per 100 g. That much hara pyaz covers 26 per cent of the folate a woman needs each day.

The greens carry 27.2 mg vitamin C per 100 g, 34 per cent of a man's daily need. Sprinkled raw at the end, as in fried rice or chaat, they keep it.

How spring onion is eaten
- Kanda paat bhaji in Maharashtra: chopped spring onions cooked with besan, green chilli and turmeric, eaten with bhakri.
- Lili dungri nu shaak in Gujarat: spring onions cooked with potato or with a coating of spiced gram flour.
- Peyajkolir torkari in Bengal: onion flower stalks cooked with potato and nigella seeds.
- Indo-Chinese fried rice and Hakka noodles: chopped greens tossed in at the end for colour and crunch.
- Spring onion paratha: finely chopped greens kneaded into atta with ajwain and green chilli.
Before you plan around it
The white bulbs and green tops of spring onion differ in more than colour. People with irritable bowel syndrome who react to onion often tolerate the green tops much better, because the fermentable carbohydrates that trigger symptoms are concentrated in the white part. Spring onions trap soil between their leaves and at the roots, so trim the root end, peel away the outer layer and rinse each stalk. They wilt quickly; wrap them in a dry cloth in the fridge or stand them in a glass of water.

Yes, in everyday use these names mean the same thing: young onion plants with small white bulbs and green leaves. Some markets also sell slightly more mature plants with rounder bulbs, which are still sold as spring onions.
Can people with IBS eat spring onion?
Many people with irritable bowel syndrome who react to onion tolerate the green tops of spring onion, which are low in the fermentable carbohydrates that cause symptoms. The white bulbs are higher in them. A dietitian can help work out personal limits.
