Celery stalk: nutrition per 100 g

Per 100 g, raw celery stalk gives 16 kcal, 1.0 g protein, 2.3 g carbohydrate and 2.1 g fibre, according to IFCT 2017, with 92.9 g water. Its 465 micrograms of beta-carotene ranks 4th of 31 vegetables, and its iron, 1.36 mg, ranks 8th of 39. Celery is mostly a flavouring vegetable in India, essential to Indo-Chinese soups and fried rice.

About celery stalk

Celery, Apium graveolens, is grown in India mainly in the cool season around Punjab, Haryana, the Nilgiris and the hills, for its crisp, ribbed stalks and for its seeds, ajmod, used in Ayurvedic preparations and pickles. IFCT 2017 records names in 5 languages: ajmud in Hindi, celery daandi in Gujarati, sivarikkeerai in Tamil, dieng seleri in Khasi, and randhuni in Bengali, which in Bengal usually names the seed spice of a related wild plant used in shukto and dal tempering.

The stalks themselves have found their way into Indian cooking through Indo-Chinese food. Finely chopped celery is part of the base of manchow and hot and sour soup, vegetable fried rice and Hakka noodles in restaurants from Kolkata to Mumbai. At home it goes into clear soups, vegetable stocks and salads, and the leaves can be used like a strong coriander.

How celery stalk is eaten

  • Manchow or hot and sour soup: finely chopped celery sauteed with garlic, ginger and green chilli as the flavour base.
  • Vegetable fried rice and Hakka noodles: a handful of diced celery tossed in with cabbage, carrot and spring onion.
  • Clear vegetable soup or stock: celery simmered with onion, carrot and peppercorns.
  • Sliced raw into a salad with apple, cucumber, peanuts and a curd and mustard dressing.
  • Celery leaves chopped into a green chutney or over dal in place of some coriander.

Before you plan around it

Celery juice is promoted online as a cleansing drink, but there is no good evidence that it does anything special; juicing also strips out most of the fibre. Eating the stalks whole is the better habit. Celery is one of the common food allergens in Europe and can cause reactions, sometimes severe, in sensitive people, often along with birch pollen or spice allergies. Anyone who notices itching or swelling after eating it should stop and speak to a doctor. The stalks hold soil at the base, so separate and wash them well.

Is celery good for weight loss?
