Button mushroom: nutrition per 100 g

Per 100 g, fresh button mushrooms give 27 kcal, 3.7 g protein, 2.0 g carbohydrate and 3.1 g fibre, according to IFCT 2017. The protein ranks 5th of 39 vegetables, a useful amount for so few calories. Button mushrooms also carry 318 mg potassium and 87 mg phosphorus per 100 g, but very little folate, thiamine or iron.

About button mushroom

The white button mushroom, Agaricus, is India's most familiar cultivated mushroom. Solan in Himachal Pradesh calls itself the mushroom city of India, and Haryana, Punjab and Uttarakhand grow most of the rest, in winter sheds or climate-controlled units, which is why prices drop in the cold months. IFCT 2017 records names in 13 languages, most of them general words for mushroom: khoomba in Punjabi, banger chata in Bengali, biladi no top in Gujarati, bhoochhtra in Marathi, putta godugu in Telugu and kaalaan in Tamil.

In Indian kitchens, button mushrooms play a role close to paneer: they soak up gravy and give a meaty bite. Matar mushroom and kadai mushroom are restaurant staples, mushroom tikka goes into the tandoor, and Chettinad mushroom masala and mushroom biryani are common in the south. Sliced raw or lightly sauteed, they also go into omelettes, sandwiches and Indo-Chinese stir-fries.

    Button mushrooms carry 3.7 g protein per 100 g, 130th of 257 foods. A 100 g serving supplies 7 per cent of a man's protein requirement and 8 per cent of a woman's, for 27 kcal.

    Each 100 g provides 3.1 g fibre and 318 mg potassium with just 8 mg sodium. That balance suits anyone keeping an eye on blood pressure.

    At 27 kcal, 0.4 g fat and 90.1 g water per 100 g, mushrooms bulk up a curry or stir-fry without adding much energy. The cream and butter in many mushroom gravies add far more.

How button mushroom is eaten

  • Matar mushroom: quartered mushrooms and green peas in an onion, tomato and cashew gravy.
  • Kadai mushroom: mushrooms tossed with capsicum and onion in a coarse coriander and red chilli masala.
  • Mushroom tikka: whole mushrooms marinated in hung curd, ginger, garlic and spices, then grilled or baked.
  • Chettinad mushroom masala: mushrooms in a roasted coconut, pepper and fennel paste.
  • Mushroom and egg bhurji: sliced mushrooms sauteed with onion and green chilli, then scrambled with eggs.

Before you plan around it

Only eat cultivated mushrooms from a shop or a known grower. Several poisonous wild mushrooms look like edible ones, and deaths from wild mushroom poisoning are reported in India every monsoon. Fresh button mushrooms spoil quickly: keep them in a paper bag in the fridge, not a sealed plastic box, and use them within a few days. Wipe or rinse them briefly just before cooking rather than soaking them, since they absorb water. Discard any that are slimy or smell sour.

Are mushrooms a good source of protein?
