Bamboo shoot: nutrition per 100 g
Per 100 g, tender bamboo shoot gives 16 kcal, 1.3 g protein, 1.7 g carbohydrate and 422 mg potassium, according to IFCT 2017. It is 94.6 g water. Potassium ranks 2nd of 39 vegetables, and 100 g covers about a fifth of a man's daily vitamin C need. Bamboo shoot must always be boiled or fermented before eating, because raw shoots contain a natural cyanide-forming compound.
About bamboo shoot
Bamboo shoots are the young, cone-shaped sprouts that push up from bamboo clumps in the monsoon, cut before they harden into cane. They are a defining ingredient of north-eastern Indian cooking, and also of coastal Karnataka, Kodagu and parts of Odisha and Jharkhand. IFCT 2017 records names in 14 languages, including soidon in Manipuri, bahgaj in Assamese, ka lung siej in Khasi, kanile in Kannada, mulankoombu in Malayalam, moongil kuruthu in Tamil and veduru chiguru in Telugu.
Fresh shoots are peeled, sliced and boiled, while much of the harvest is fermented: khorisa in Assam, soibum in Manipur, mesu in Sikkim and ekung in Arunachal Pradesh. Nagaland cooks pork with fermented bamboo shoot, Manipur adds it to eromba and singju, and Assamese cooks sour fish curries with khorisa. In Kodagu and Mangaluru, kanile goes into a spicy monsoon curry or a dry sukka with coconut.

Before you plan around it
Raw bamboo shoots contain taxiphyllin, a natural compound that releases cyanide when the shoot is cut and chewed. Traditional preparation removes it: peel the shoots, slice them thinly, and boil them in plenty of water for at least twenty minutes, changing the water once, or ferment them for several weeks. Never eat fresh bamboo shoot raw or lightly cooked. Fermented shoots are safe but strongly flavoured and often salted, so watch the salt in the rest of the dish.
