Soya bean: nutrition per 100 g

Per 100 g, brown soya bean gives 381 kcal, 35.6 g protein, 19.8 g fat and 21.6 g dietary fibre, according to IFCT 2017. Its protein ranks 1st of all 257 foods in the tables, ahead of every meat and fish, and it also leads the pulses for zinc, magnesium, potassium, thiamine and plant omega-3.

01The food

About soya bean

Soya bean is both a pulse and an oilseed. Madhya Pradesh and Maharashtra grow most of India's crop, with Rajasthan next, and most of the harvest is crushed for oil, with the leftover meal turned into soya chunks and granules. The whole bean, though, has long been food in the hills and the North-East. IFCT 2017 records it as bhatmas in Hindi and Nepali, garikalai in Bengali, nunghawai in Manipuri and toh rymbai in Khasi.

Uttarakhand cooks black soya bean, bhatt, into bhatt ki churkani and bhatt ke dubke, and Nepali and Sikkimese homes roast it for bhatmas sadeko. The North-East ferments it: kinema in Sikkim, axone in Nagaland, hawaijar in Manipur and tungrymbai in Meghalaya, each with a strong, savoury aroma. Elsewhere, soya appears as soya milk, tofu, soya flour mixed into atta and, most of all, soya chunks.

IFCT 2017 tests two colours. White soya bean has 377 kcal, 37.8 g protein, 19.4 g fat, 22.6 g fibre, 8.22 mg iron and 195 mg calcium per 100 g, so it is slightly higher in protein and slightly lower in calcium than the brown.

    The top protein food in IFCT

    Brown soya bean has 35.6 g protein per 100 g, 1st of 257 foods in IFCT 2017. 100 g meets about 66 per cent of a man's daily requirement and 78 per cent of a woman's, and soya protein is unusually complete for a plant.

    Minerals across the board

    It gives 239 mg calcium, 8.29 mg iron, 4.01 mg zinc and 259 mg magnesium per 100 g, ranking 2nd, 2nd, 1st and 1st among pulses. The magnesium covers about 59 per cent of a man's need.

    An oilseed's fat

    Soya bean has 19.8 g fat per 100 g, mostly unsaturated: 11.28 g polyunsaturated and 4.56 g monounsaturated, with 1310 mg of plant omega-3, 7th of 203 foods.

    Folate and thiamine

    With 297 micrograms of folate and 0.59 mg thiamine per 100 g, it ranks 4th and 7th of all foods for these vitamins. On paper, 100 g gives about 99 per cent of a man's daily folate.

How soya bean is eaten

  • Bhatt ki churkani: black soya beans roasted, then simmered in a rice-flour thickened gravy, Kumaoni style.
  • Bhatmas sadeko: roasted soya beans tossed with onion, chilli, lemon and mustard oil, a Nepali and Sikkimese snack.
  • Soya flour in atta: a small share of soya flour kneaded into roti dough raises its protein.
  • Kinema curry: fermented soya bean cooked with onion, tomato and chilli, eaten with rice in Sikkim and Darjeeling.
  • Soya milk and tofu: soaked beans ground with water, strained and boiled; the milk can be set into tofu.

Before you plan around it

Raw soya beans contain trypsin inhibitors that block protein digestion, so they must be soaked and cooked thoroughly or roasted well; never eat them raw. Soya is one of the common food allergens, so introduce it carefully to children with other allergies. At 381 kcal and 19.8 g fat per 100 g, the whole bean is dense, and a small portion goes a long way. People taking thyroid medicine are often advised to keep soya foods apart from their dose, so they should check timing with their doctor. How much protein is in soya bean?

IFCT 2017 lists 35.6 g protein per 100 g of brown soya bean and 37.8 g for white, the highest of any food in the tables. A man would meet about 66 per cent of his daily protein from 100 g. Soya chunks, being defatted, are a separate product.

Is soya bean good for vegetarians?

Very. Soya bean's protein is close to complete, and per 100 g it also gives 239 mg calcium, 8.29 mg iron and 4.01 mg zinc in IFCT 2017. Cooked well and eaten in sensible portions, it is one of the most useful vegetarian protein foods.

Does soya bean affect hormones?

Soya contains isoflavones, plant compounds with weak oestrogen-like activity. Normal food amounts, as in Asian diets, are considered safe for most people. Those with hormone-sensitive conditions or on thyroid medicine should take advice from their doctor.

Is soya bean a pulse or an oilseed?

Both. It is a legume like dal, but with 19.8 g fat per 100 g it is crushed for oil on a large scale. IFCT 2017 files the whole bean with pulses and the oil with oils and fats.
