Colocasia leaves (arbi patta): nutrition per 100 g

Per 100 g, raw colocasia leaves give 43 kcal, 3.4 g protein, 5.6 g fibre, 216 mg calcium and 159 micrograms of folate, according to IFCT 2017. The folate ranks 2nd of 26 green leafy vegetables and covers 72 per cent of a woman's daily requirement. The leaves must always be cooked well, with something sour, because raw colocasia irritates the mouth and throat.

About colocasia leaves (arbi patta)

Colocasia, or taro, is grown for its starchy corms, the arbi of north India, but its broad, heart-shaped leaves are a vegetable in their own right along the west coast, in Bengal and the north-east, and in the Himalayan foothills. IFCT 2017 records names in 15 languages: arvi ka sag in Hindi, alu pan in Marathi, advi na pan in Gujarati, kochu pata in Bengali, saru saga in Odia, chembu ilagal in Malayalam, chama akulu in Telugu and karkalo in Nepali.

The best-known dish is the rolled, steamed and sliced leaf: patra in Gujarat, alu vadi in Maharashtra, patrode in Udupi and Mangaluru, and patrodu in Himachal Pradesh. Each leaf is spread with a spiced besan or rice paste, often with tamarind and jaggery, rolled up, steamed and then fried or tempered. Bengali kitchens wrap prawns or hilsa in the leaves to steam them, and Kerala cooks make chembila curry with coconut.

    Colocasia leaves carry 159 micrograms of folate per 100 g, 11th of 197 foods. On folate, colocasia leaves cover 53 per cent of a man's daily need and 72 per cent of a woman's. Folate is needed to make DNA and red blood cells.

    With 5758 micrograms of beta-carotene per 100 g, colocasia leaves sit 6th of 160 foods. The body converts it to vitamin A, and cooking it with a little oil, as in patra, helps absorption.

    100 g supplies 5.6 g dietary fibre, 5th among leafy vegetables, and 335 mg of the plant omega-3 fat ALA, which ranks 26th of 203 foods. The leaf's 1.4 g of fat is high for a green.

    Colocasia leaves have 216 mg calcium and 40.7 mg vitamin C per 100 g. Much of the calcium is locked up as the same oxalate crystals that cause the itch, so the figure overstates what the body takes up.

Before you plan around it

Colocasia leaves contain needle-like crystals of calcium oxalate that sting the lips, tongue and throat if the leaves are eaten raw or undercooked. Traditional recipes solve this with long steaming and a sour ingredient: tamarind, kokum, lemon or raw mango. Rub a little oil on your hands before handling the leaves, remove the thick central veins, and never taste the paste raw. People with a history of kidney stones should ask their doctor about high-oxalate foods such as this. Some varieties itch more than others, so buy from sellers who know their leaves.

Why do colocasia leaves cause itching?

The leaves contain sharp microscopic crystals of calcium oxalate. Raw or lightly cooked, they lodge in the mouth and throat and cause stinging. Thorough steaming or boiling, together with tamarind, kokum or lemon, softens and dissolves enough of them to make the dish comfortable to eat.

Are colocasia leaves healthy?

Cooked properly, yes. IFCT 2017 lists 159 micrograms folate, 5758 micrograms beta-carotene and 5.6 g fibre per 100 g. Patra and alu vadi are usually fried after steaming, so the oil used adds most of the calories; steaming alone keeps the dish light.
