What this figure covers
The recipe cooks 100 g of rohu in a gravy of 50 g of onion, 50 g of tomato and 18 g of lemon, using 1 tablespoon of oil, and the whole of it is one bowl. In home terms that is one or two pieces of fish with their gravy, a normal single helping. A restaurant fish curry is usually richer, with more oil floating on the gravy and sometimes coconut milk or cream. Fish that is deep-fried before it goes into the curry also takes up oil that this recipe does not count, since the tablespoon here covers all of the cooking.

Many kitchens shallow-fry or deep-fry the fish pieces before adding them to the gravy. The fish holds on to some of that oil. If it is fried separately, the oil it took up is extra to what the gravy was cooked in.

Rohu is a moderately lean river fish. An oilier fish such as hilsa, or a fattier cut near the belly, raises the fat and the calories for the same weight. A leaner white fish lowers them slightly. Protein stays in the same range.

Coconut, cream and gravy base
The recipe's gravy is onion and tomato. Coastal curries built on ground coconut or coconut milk, and restaurant gravies finished with cream, carry more fat than this one for the same amount of fish.

Ways to keep it lighter
- Cook the bowl with a measured teaspoon or two of oil in place of a tablespoon.
- Add the fish to the gravy raw, or pan-sear it lightly, instead of deep-frying it first.
- Keep the gravy on onion and tomato and leave out cream or coconut milk.
- Spoon the curry over a smaller mound of rice and add a vegetable on the side.
Before you rely on the number
Two things are worth knowing. The gravy is salted, as any curry is, and the salt on the plate rises with pickles or papad on the side. And more than half the energy is fat from the cooking oil, not the fish, so the same fish can be a much lighter dish. People on a salt or fat limit for high blood pressure or a heart condition should follow the portions their doctor or dietitian has set.
