Calories in Boti Kebab

One boti kebab has about 73 kcal, with 5 g of protein, 1.7 g of carbohydrate and 5.1 g of fat. The figure is from the Indian Nutrient Databank and is for one small kebab: 24 g of boneless mutton, tenderised with raw papaya and curd and cooked with half a teaspoon of oil. A plate holds several.

Of this energy, about 9% comes from carbohydrate, 63% from fat and 28% from protein.

1 boti kebab is about 3% of the daily energy requirement of a sedentary adult man and 4% of a sedentary adult woman's (ICMR-NIN, 2020).

These figures are from the Indian Nutrient Databank (INDB), which calculates each dish from a standard recipe using Indian food composition data. They describe that recipe and that serving: a larger portion, or more oil, ghee or sugar, gives more. Source: Vijayakumar A, Dubasi HB, Awasthi A, Jaacks LM. 02The number

What this figure covers

The recipe marinates 120 g of boneless mutton boti with 20 g of raw papaya, 30 g of curd, onion and lemon, cooks it with 2 teaspoons of oil and counts 5 kebabs. Each kebab is thus a single cube of meat, 24 g, with half a teaspoon of oil. That is how boti is threaded on a skewer, a cube at a time, so the figure is per cube and not per skewer or per plate. A restaurant plate brings a skewer or two of larger cubes, glistening with ghee. The honest unit for comparison is the weight of meat, with the cooking fat counted on top.

Fat supplies 63% of the energy, protein 28% and carbohydrate 9%. The 5.1 g of fat is partly the mutton's own and partly the half teaspoon of oil, and for a piece of meat this small the oil is a large share. The 5 g of protein comes from the 24 g of mutton. Raw papaya, curd, onion and lemon are there to tenderise and flavour; together they add the 1.7 g of carbohydrate and little else. Compared with a seekh kebab of similar size, the boti is a touch higher because of that oil.

03The recipe behind it

What goes into one serving

The recipe INDB analysed makes 5 kebabs. These are its main ingredients; spices, salt and water are left out.

04What moves it

What changes the number

  • 01

    Oil and ghee in cooking

Half a teaspoon of oil per kebab is already in the figure. A further teaspoon on one kebab would take it to 117 kcal, and a teaspoon of ghee to 118 kcal. Restaurant boti is basted more than once, so the fat is where the number moves.

  • 02

    The cut of mutton

Boti from the leg is lean; boti from the shoulder, ribs or with a strip of fat attached is not. Cubes with visible fat left on are juicier and carry more calories for the same weight.

  • 03

    How big the cubes are

The recipe's cube is 24 g of meat. Two are 146 kcal and three are 219 kcal with 15 g of protein. Larger cubes scale up in proportion, so a skewer of big pieces can be a meal's worth of meat.

  • 04

    The marinade

Raw papaya and curd tenderise the meat and add next to nothing. Marinades made with cream, cashew paste or a lot of oil are different, and the meat carries some of that into the fire with it.

06On the plate

In a meal and in a day

One cube of boti is about 3% of the daily energy requirement of a sedentary man and 4% of a woman's. Three come to 219 kcal with 15 g of protein, which works as a starter for one or as the meat in a meal with roti, onion and chutney. Boti kebab has almost no carbohydrate or fibre, so it needs the salad and the bread to make a plate. Served before biryani or korma, as it often is, it adds meat and fat to a meal that already has plenty of both, and that is the occasion to stop at two or three.

Ways to keep it lighter

  • Choose lean leg boti and trim the visible fat before marinating.
  • Rely on raw papaya and curd to tenderise, and add only a little oil to the marinade.
  • Grill on skewers or a rack and skip the ghee basting.
  • Serve with onion, mint chutney and lemon, and keep the rumali roti to one.
07Worth knowing

Before you rely on the number

Nearly two-thirds of the energy in this kebab is fat, 63%, and that is with only half a teaspoon of oil a piece. Restaurant boti, basted and served in bigger cubes, will be well above 73 kcal each. It is red meat, so people who have been advised to limit it for a heart condition, gout or raised cholesterol should go by what their doctor or dietitian has told them.

Food composition is general information, not a diet plan. Anyone managing a medical condition should plan their diet with a doctor or a registered dietitian.

08Questions

Boti Kebab: common questions

How many calories are in one boti kebab?

About 73 kcal for one kebab made from 24 g of boneless mutton with half a teaspoon of oil, by the Indian Nutrient Databank's recipe. Bigger cubes and extra ghee raise it, so a restaurant piece may be considerably more.

How much protein is in boti kebab?

About 5 g in one small kebab, from 24 g of mutton. Two kebabs give 10 g and three give 15 g. Protein supplies 28% of the energy and fat 63%. A leaner cut cooked with less oil shifts that balance towards protein.

Is boti kebab good for weight loss?

In small numbers it fits, since each kebab has 5 g of protein and very little carbohydrate. It is not a lean dish, though: most of its 73 kcal is fat. Grilled with little oil and eaten with salad it is a reasonable choice. The whole day's eating determines weight.

What is the difference between boti kebab and seekh kebab?

Boti is whole cubes of meat; seekh is spiced mince pressed around a skewer. In these recipes a boti kebab is 73 kcal and a mutton seekh kebab is 60 kcal, with about 5 g of protein in each. The boti is cooked with oil, which accounts for the gap.
