Amaranth seed (rajgira): nutrition per 100 g
Per 100 g, black amaranth seed gives 356 kcal, 14.6 g protein, 9.33 mg iron and 325 mg magnesium, according to IFCT 2017. Rajgira ranks 1st of 14 cereals and millets for all three of those nutrients, which is a great deal of nourishment for a seed most Indian homes only buy when a fasting day comes round.
About amaranth seed (rajgira)
Rajgira, called ramdana in Hindi, is the tiny seed of the amaranth plant, a cousin of the chaulai greens sold in Indian vegetable markets. It is not a grass grain like wheat or rice, which is why many families allow it on fasting days when ordinary grains are set aside. Small plots of it grow across the Himalayan states, Gujarat, Maharashtra and parts of the south, and IFCT 2017 records it in 11 languages, from thotakoora ginjalu in Telugu to keerai vidai in Tamil and chaulali beej in Punjabi.
Most people meet it popped. The seeds are tossed in a hot, dry kadai until they burst into white puffs, then bound with jaggery into rajgira chikki or ladoo, a fixture of the vrat thali in Maharashtra, Gujarat and Uttar Pradesh. The flour becomes rajgira puri, thalipeeth and sheera, usually bound with boiled potato because it has no gluten to hold a dough together.
IFCT 2017 tests two colours of seed. The black seed shown on this page carries 14.6 g protein, 9.33 mg iron and 181 mg calcium per 100 g. The pale brown seed is close behind at 13.3 g protein, 8.02 mg iron and 162 mg calcium, so either colour is a sound buy.

Black rajgira has 9.33 mg iron per 100 g, 1st of 14 cereals and millets and 15th of 242 foods in IFCT 2017. That meets about 49 per cent of a man's daily requirement and 32 per cent of a woman's. Plant iron is absorbed less readily, so add lemon or amla to the meal.

Magnesium near the top of the table
At 325 mg per 100 g, rajgira ranks 10th of 242 foods for magnesium. 100 g covers 74 per cent of a man's daily need and 88 per cent of a woman's, more than any other grain in the group.

Protein that actually counts
With 14.6 g protein per 100 g, rajgira leads its group, ahead of quinoa. It supplies 27 per cent of a man's daily protein and 32 per cent of a woman's, which matters on fast days when dal and wheat are off the plate for many families.

Calcium strong, thiamine weak
Calcium is 181 mg per 100 g, 3rd in the group, and vitamin B6 is 0.5 mg, about 21 per cent of a man's requirement. Thiamine is the weak point: 0.04 mg, the lowest of the 14 cereals and millets.

How amaranth seed (rajgira) is eaten
- Rajgira ladoo and chikki: popped seeds folded into melted jaggery and pressed into balls or bars, the classic fasting-day sweet.
- Rajgira puri or paratha: the flour kneaded with mashed boiled potato, since on its own it cracks when rolled.
- Rajgira sheera: the flour roasted in a little ghee, then cooked with milk and jaggery into a soft pudding.
- Popped ramdana stirred into curd or milk for a quick breakfast, or sprinkled over a bowl of fruit chaat.
- A handful of rajgira flour mixed into wheat or jowar roti dough adds iron and protein without changing the taste much.

Before you plan around it
Rajgira carries 5.7 g fat per 100 g, the most of any grain in its group, so the flour turns stale and bitter faster than wheat atta. Buy small packs and keep them airtight. Like other seeds it contains phytate, which holds back part of its iron and calcium; sprouting the seed lowers it, and eating it with a source of vitamin C helps the body take up more. Fasting versions are often fried or heavy with jaggery, so the ladoo is a treat rather than an iron plan. The seed has no gluten, but flour ground in a shared chakki can pick up wheat.

Is rajgira a grain or a seed?
Botanically it is a seed from the amaranth plant, the same family as chaulai greens, so it is often called a pseudocereal. IFCT 2017 files it with cereals and millets because Indian kitchens cook it like one, and its 60.0 g of carbohydrate per 100 g is in the same range as other grains.
Why is rajgira eaten during fasts?
Many fasting customs set aside wheat, rice and pulses. Because rajgira is not a true grain, families in Maharashtra, Gujarat and north India use it in their place for puri, sheera and ladoo during Navratri, Ekadashi and other vrat days. Practice varies from one household to the next.
Is rajgira good for iron?
Among grains, yes. IFCT 2017 lists 9.33 mg iron per 100 g of black amaranth seed, the highest of the 14 cereals and millets. Plant iron is absorbed less readily, so pair it with lemon, tomato or guava and keep tea away from the meal. Anaemia itself needs a doctor's diagnosis and treatment.
Is rajgira gluten-free?
Rajgira has no gluten of its own, so it suits people with coeliac disease or gluten sensitivity. The risk is cross-contact: flour milled in a shared chakki or packed alongside wheat can carry traces. Choose sealed packs labelled gluten-free if this matters for your health.
