Navratan Korma

Navratan korma is a mild pale gravy of cashew and curd carrying nine separate additions: vegetables, paneer, nuts and fruit. It fails in two predictable ways, a split gravy and a gritty one, and both come down to how the curd and the cashew are handled. This page fixes both, and settles what the nine gems are supposed to be.

Ingredients

  • 1/2 cup cashews, soaked in hot water for 20 minutes
  • 1 cup mixed vegetables (carrot, beans, peas, cauliflower), diced small
  • 150 g paneer, cut into cubes
  • 1/2 cup thick curd, whisked smooth
  • 1 onion, boiled and ground to a paste
  • 2 green chillies and 1 inch ginger, ground together
  • 1/4 cup pineapple pieces or seedless grapes, and 1 tablespoon raisins
  • 4 cloves, 2 green cardamoms and 1 bay leaf
  • 2 tablespoons ghee or oil
  • 1/2 teaspoon sugar and salt to taste

This is the richest of the mild vegetarian gravies and there is no point pretending otherwise. Cashew paste and cream hold most of the energy, and while cashew fat is largely unsaturated, half a cup of it across four servings is still a substantial amount of fat. What the dish genuinely supplies is worth noting: paneer carries around 18 g of protein per 100 g, the mixed vegetables bring fibre, and the nuts bring magnesium. Dropping the cream and relying on the cashew alone keeps the texture and removes the saturated fat.

Method

    Soak the cashews in hot water, then grind them with a few spoons of that water until there is no grain left at all between your fingers.

    Steam or boil the diced vegetables until just tender and run them under cold water at once so the greens stay green.

    Heat the ghee, drop in the whole spices, then add the boiled onion paste and cook it without letting it take any colour. This gravy has to stay pale.

    Stir in the ginger and chilli paste for a minute, then take the pan off the heat entirely before the curd goes in.

    Return it to the lowest flame, stirring, and only once it is warm and even should you add the cashew paste, sugar, salt and about a cup of hot water.

    Simmer for six to eight minutes until it thickens enough to coat a spoon, then fold the cooked vegetables through.

    Add the paneer, fruit and raisins in the last two minutes with the flame right down, and take it to the table straight away.

What are the nine gems supposed to be?

Navratan means nine gems, and the honest answer is that there is no fixed list. The usual reading is three or four vegetables, paneer, two or three nuts, a dried fruit and a fresh fruit, which together make nine visible additions in one bowl. Restaurants vary it constantly. What matters more than hitting the number is variety of texture: something soft, something firm, something crunchy and something sweet in the same spoon. Counting to nine for its own sake and ending up with nine bland cubes misses what the dish is doing.

Why is the onion boiled rather than fried?

Because browning would colour the gravy, and a korma of this style is defined by being pale. Boiling the onion for a few minutes and grinding it gives all the body and sweetness of an onion base with none of the caramel colour or the strong browned taste. If you fry it even to a light gold the finished gravy turns beige and starts tasting like a standard North Indian curry. The same restraint separates this from the darker malai kofta gravies that use the same cashew thickening.

Why does the gravy turn grainy?

Two different causes, and they need different fixes. Grainy with visible white specks means the curd has split, which happens when it meets a hot pan; the answer is to take the pan off the flame, stir the curd in, and bring the heat back slowly while stirring. Grainy in a uniform, sandy way means the cashew was not ground finely enough. Cashews need a full twenty minutes in hot water and then grinding with very little liquid, since a thin mixture spins rather than grinds. Rub a little between two fingers before you use it, and if you feel any texture at all, grind it again.

Why does the fruit go in at the very end?

Pineapple contains bromelain, an enzyme that breaks down protein, and simmering it in a curd and cashew gravy will thin the gravy and can give it a faintly bitter edge. Two minutes on a low flame is enough to warm the fruit through without giving the enzyme time to do much. Grapes have the separate problem of collapsing into skins if they are cooked. Raisins are the exception and can go in earlier, since they want the time to plump up. The paneer belongs in the same late window for a different reason: it firms and squeaks if it is held in heat.

Is korma the same thing as shahi paneer?

No, though they share a cashew base. Korma properly refers to a technique, braising meat or vegetables gently in yoghurt or a nut paste, and there are dark Mughlai kormas and pale ones. Navratan korma is the sweet mild vegetarian version that became a restaurant standard. Shahi paneer is a single-ingredient dish with a tomato note that korma does not have, and it does not carry fruit. The confusion is worth clearing up because the cooking method differs even where the ingredient list overlaps.

Making it lighter without losing what it is

Cut the cream entirely and the dish loses almost nothing, because the cashew is already providing the richness. Swapping half the cashew for melon seed paste cuts fat while keeping the pale colour and the body. Increasing the vegetable proportion against the gravy improves the fibre and makes the same quantity of sauce stretch further. What does not work is thinning it with milk, which makes it watery rather than lighter. Serve it with vegetable pulao rather than a second rich dish. Why did my navratan korma split?

The curd went into a hot pan. Whisk the curd smooth, take the pan off the flame before adding it, then return it to the lowest heat and stir continuously for two minutes. Full fat curd splits far less readily than low fat, and a teaspoon of gram flour whisked in gives extra insurance.
