Zucchini: nutrition per 100 g
Per 100 g, raw green zucchini gives 20 kcal, 1.1 g protein, 2.3 g carbohydrate and 2.3 g fibre, according to IFCT 2017, with 15.8 mg vitamin C and no measurable sodium. Its 152 mg of the plant omega-3 fat ALA ranks 2nd of 36 vegetables. Zucchini is a newcomer to Indian markets, but it cooks much like lauki or tinda in a sabzi, kootu or thoran.
About zucchini
Zucchini, Cucurbita pepo, is a summer squash picked young, when the skin is still glossy and tender. It came to India through hotel and cafe kitchens and is now grown in Himachal Pradesh, Kashmir and the Nilgiris and in polyhouses near Pune, Bengaluru and Delhi. IFCT 2017 records names in 7 languages, many of them borrowed from familiar gourds: sabed kaddu in Hindi, kashi bhopla in Marathi, seemai suraikayi in Tamil, dhudul in Bengali and kaashiral in Kashmiri.
The tables compare green and yellow zucchini. Green, on this page, has 20 kcal and 15.8 mg vitamin C per 100 g. Yellow has 19 kcal, a little more protein, 1.3 g, more calcium, 21 mg, and slightly more vitamin C, 16.7 mg. Indian cooks use either as they would a mild gourd: a dry sabzi with cumin and tomato, a kootu with moong dal, a Kerala-style thoran, grated into thepla dough or raita, or grilled with chaat masala.

How zucchini is eaten
- Zucchini sabzi: diced zucchini cooked quickly with cumin, onion, tomato and a pinch of turmeric, in the style of lauki or tinda.
- Zucchini moong dal kootu: zucchini simmered with yellow moong dal and a coconut and green chilli paste.
- Zucchini thoran: grated zucchini stir-fried with coconut, shallots and curry leaves.
- Zucchini thepla or paratha: grated, squeezed zucchini kneaded into wheat dough with ajwain and green chilli.
- Grilled zucchini: thick slices brushed with mustard oil, grilled and dusted with chaat masala and lemon.
Before you plan around it
Very occasionally, zucchini and other squashes develop high levels of bitter cucurbitacins, which can cause stomach cramps, vomiting and diarrhoea. If a raw slice tastes unusually bitter, throw the whole zucchini away instead of cooking it. Zucchini cooks in minutes and turns watery if overdone, so add it late and cook it uncovered. Choose small to medium, firm zucchini with shiny skin; the skin is edible and holds much of the colour.

Is zucchini good for health?
Yes. IFCT 2017 lists zucchini at 20 kcal per 100 g with 2.3 g fibre, 15.8 mg vitamin C and no measurable sodium. It is light and easy to digest, and works well in place of lauki or tinda in Indian recipes.
What is zucchini called in Hindi?
Zucchini has no long-established Hindi name. IFCT 2017 records sabed kaddu, meaning white pumpkin, in Hindi, kashi bhopla in Marathi and seemai suraikayi in Tamil. Most shops simply call it zucchini.
Can zucchini be eaten raw?
Yes. Young zucchini can be sliced thin or grated raw into salads and raita. Taste a piece first: if it is unusually bitter, discard it, because bitterness can signal natural toxins.
Is green or yellow zucchini better?
They are very close in IFCT 2017. Yellow zucchini has slightly more protein, calcium and vitamin C, 16.7 mg against 15.8 mg per 100 g, while green has a little more fibre, 2.3 g against 1.8 g. Choose either.
