Field beans (fresh pods): nutrition per 100 g
Per 100 g, tender broad field bean pods give 31 kcal, 3.1 g protein, 5.6 g fibre and 123 micrograms of folate, according to IFCT 2017. The folate ranks 1st of 39 vegetables and covers 56 per cent of a woman's daily requirement. Beta-carotene, at 555 micrograms, ranks 3rd. These are the flat green pods known as avarekai in Karnataka, papdi in Gujarat and sem in the north.
About field beans (fresh pods)
Field beans are the flat, pale green pods of the lablab or hyacinth bean, a vigorous climber grown on fences and trellises across India through the cool months. IFCT 2017 records names in 13 languages, including sem in Hindi, valpapdi in Gujarati, avare in Kannada, papta in Marathi, shim in Bengali, vidaiavarai in Tamil, chikkudu ginjalu in Telugu and avar in Malayalam. The tables analyse two types: broad pods, on this page, and lean pods, which have slightly more protein, 3.7 g, and fibre, 6.2 g, but less iron, 1.48 mg against 1.95 mg.
In Karnataka the arrival of avarekalu in December and January is an event, with Bengaluru's markets selling heaps of pods and whole streets of stalls cooking avarekalu saaru, akki rotti, uppittu and even sweets. Gujarat uses papdi in undhiyu and valor muthia nu shaak, Tamil Nadu makes avarakkai poriyal and sambar, and Bengal cooks shim with brinjal and small fish.

Broad field beans carry 123 micrograms of folate per 100 g, 1st of 39 vegetables and 16th of 197 foods. The pods give a man 41 per cent of his daily folate need. Folate is vital before and during early pregnancy.

The 555 micrograms of beta-carotene per 100 g ranks 3rd of 31 vegetables and 37th of 160 foods, unusual for a pale green pod. The body converts it to vitamin A.

Fibre, iron and calcium
Each 100 g supplies 5.6 g fibre, 1.95 mg iron and 71 mg calcium, ranking 8th, 4th and 4th among vegetables. These are solid figures for a light pod vegetable.

Vitamin B6 and magnesium
Field beans have 0.42 mg vitamin B6 per 100 g, 22 per cent of a woman's daily requirement, and 51 mg magnesium. Vitamin B6 helps the body use protein.

How field beans (fresh pods) is eaten
- Avarekalu saaru in Karnataka: shelled fresh beans simmered in a coconut, coriander and tamarind gravy, eaten with ragi mudde.
- Avarekalu akki rotti: fresh beans mixed into a rice flour dough with onion, green chilli and dill, patted thin on a tawa.
- Undhiyu and valor nu shaak in Gujarat: papdi pods cooked with yam, sweet potato and muthia, or alone with ajwain.
- Avarakkai poriyal in Tamil Nadu: chopped pods stir-fried with coconut, mustard seeds and curry leaves.
- Shim begun in Bengal: field beans and brinjal cooked with panch phoron and green chilli.
Before you plan around it
Lablab beans contain natural compounds, including lectins and cyanogenic glycosides, that make the raw beans hard to digest and, in larger amounts, harmful. Thorough cooking breaks them down, so never eat field beans raw, and boil shelled mature beans well. Pull off the tough strings along the edges of the pods. Some people find avarekalu causes wind; the Karnataka habit of cooking it with ginger, garlic and asafoetida is a good one. Mature dried field beans are a pulse and are listed separately with very different values.

What are field beans called in Kannada and Gujarati?
IFCT 2017 records avare in Kannada and valpapdi in Gujarati. The fresh shelled beans are avarekalu in Karnataka and papdi or valor in Gujarat. In Hindi they are sem, in Marathi papta, and in Tamil vidaiavarai.
Are field beans good for pregnancy?
They are a good source of folate, 123 micrograms per 100 g in IFCT 2017, the highest of 39 vegetables, and folate is important before and during early pregnancy. They should always be eaten well cooked. Pregnancy diets should be planned with a doctor or dietitian.
Can field beans be eaten raw?
No. Raw lablab beans contain natural compounds that can cause stomach upset and, in larger amounts, poisoning. Cooking them thoroughly, as in saaru, poriyal or undhiyu, makes them safe.
Which is better, broad or lean field beans?
They are close. Lean pods have a little more protein and fibre, 3.7 g and 6.2 g per 100 g, while broad pods have more iron and calcium. Both are good choices, and cooks usually choose by texture and taste.
