Country chicken (desi): nutrition per 100 g
Per 100 g, country chicken leg with skin gives 173 kcal, 17.0 g protein and 11.7 g fat, according to the Indian Food Composition Tables 2017. It stands out for minerals rather than protein: its 357 mg of potassium ranks 2nd of 14 in the meat, poultry and egg group, and its 2.71 mg of zinc meets 16 per cent of a man's daily requirement.
About country chicken (desi)
Country chicken is the backyard bird of rural India, scratching for grain and insects and slaughtered far older than a broiler. It is sold as desi murga in the north, naatu kozhi in Tamil Nadu, naati koli in Karnataka, naadan kozhi in Kerala and natu kodi in Andhra Pradesh and Telangana, and it usually costs two or three times the broiler price. Breeds such as the black-fleshed Kadaknath of Madhya Pradesh and the fighting Aseel are kept for this market.
The meat is firmer and darker, with a stronger flavour, and it needs long cooking. That shapes the dishes: Andhra natu kodi pulusu, Chettinad naatu kozhi kuzhambu, Kerala naadan kozhi curry and the peppery naatu kozhi rasam often given to new mothers in Tamil Nadu. IFCT 2017 measures four cuts with skin on. The breast has the most protein at 22.1 g per 100 g, the thigh 18.3 g, the wing 18.6 g and the leg 17.0 g.

Country chicken leg gives 2.71 mg of zinc per 100 g, ranking 41st of 243 foods and 6th of 14 in its group. That covers 16 per cent of a sedentary man's daily zinc requirement and 21 per cent of a woman's. Zinc supports growth, wound repair and the sense of taste.

Rich in potassium
At 357 mg of potassium per 100 g, the leg ranks 2nd of 14 in the meat, poultry and egg group, behind only rabbit. Potassium works against sodium in keeping blood pressure in range.

The leg supplies 17.0 g of protein per 100 g, about 31 per cent of a man's daily requirement and 37 per cent of a woman's. Because IFCT measured it with skin, fat is 11.7 g; taking the skin off before cooking trims that.

Country chicken leg meets 15 per cent of a man's vitamin B6 requirement, 14 per cent of his niacin and 9 per cent of his thiamine per 100 g, a steady contribution rather than a standout.

How country chicken (desi) is eaten
- Natu kodi pulusu: Andhra-style country chicken in a tangy tamarind and red chilli gravy, cooked slowly until the meat gives.
- Naatu kozhi rasam: a thin, peppery Tamil soup of country chicken bones and meat with garlic, cumin and black pepper.
- Pressure-cook the pieces for a few whistles before adding them to a masala; the older bird stays tough otherwise.
- Kerala naadan kozhi curry: roasted coconut, coriander and pepper with country chicken, eaten with rice or appam.
Before you plan around it
Country chicken is not a leaner bird than broiler on these figures. The IFCT cuts were measured with skin, and fat sits between 10.2 g and 12.8 g per 100 g across them, so removing the skin is the simplest way to cut fat. The price premium buys flavour and texture more than extra protein. Birds sold as desi are sometimes crossbreeds, and backyard birds are slaughtered and handled in less controlled conditions, so buy from a trusted seller, keep the meat cold and cook it thoroughly.

Is country chicken healthier than broiler chicken?
It is different rather than clearly healthier. IFCT 2017 gives country chicken leg with skin 17.0 g protein and 11.7 g fat per 100 g, with useful zinc at 2.71 mg and potassium at 357 mg. Its stronger taste and firmer meat are the main reasons people pay more for it.
Which cut of country chicken has the most protein?
The breast, at 22.1 g of protein per 100 g with skin. The wing has 18.6 g, the thigh 18.3 g and the leg 17.0 g. Energy is similar across all four, from 173 to 188 kcal per 100 g.
Why is naatu kozhi given to new mothers?
In Tamil Nadu and Karnataka, a peppery country chicken soup or kuzhambu is a traditional food after childbirth. It is warm, easy to eat and brings protein and zinc. A new mother still needs a varied diet overall, and any specific postnatal needs are best discussed with her doctor.
Why does country chicken take longer to cook?
Country birds are older at slaughter and more active, so their muscle is firmer and has more connective tissue. Slow simmering or a few whistles in a pressure cooker softens the meat before it goes into the final masala.
